It was all I’d expected it to be. Extremely well balanced tannin, acidity, & sweetness. A symphony of flavours, w/ the bubbles just enough to lift it. Pretty much perfect to accompany our Xmas lunch, & imho, a perfect alternative to any sparkling wine. 🥰

Amber colour with a white creamy head. Mousse is in a constant flow; tiny bubbles but not in strings. Low aromas from this; light hedgerow. Incredibly dry and austere, light lemons but not much primary or secondary flavours. Lean and dry.
