M.J.K. was brewed, aged, blended and bottled in honor of our son. This English-inspired Barleywine was conceptualized more than 3 years ago and was first brewed in June of 2018. As time has passed, three unique recipes for M.J.K. have been brewed and then aged for their first rest in Willett Family Estate barrels. These unique expressions allowed our ever-changing perception of what Barleywine is to be explored and revealed to you through our precise blending of double barrel-aged and triple barrel-aged Barleywine.

In September, 2020, a great barrel broker friend of ours offered us the chance to buy twenty 10-year-old Van Winkle barrels. Luckily, we had my favorite recipe already fermenting away - O.W.K. This batch hit all its numbers and was then racked to our first Van Winkle barrels – this beer represents a blend of the first BBT from single-source distillery barrels.

These barrels found their way into Beer:Barrel:Time 2022, OWK 2023 and 8 Candles. The heart of the blend was chosen last fall for this 10-year anniversary beer – Van Winkle BBT 2023.

This O.W.K. stout recipe aged exclusively in Van Winkle 10-year bourbon barrels for 25 months. Read Less

The Heart of Darkness is our capstone mead, made from hand-harvested estate fruit grown by the Schramm’s. The cherries are of the Schaarbeek variety, an intensely flavorful, European Morello type. The raspberries are Heritage and Latham, grown in Michigan by the Schramm family for three generations, and the black currants are Crandall and Consort. Production is extremely limited, as the amount of care and labor which go into each batch is substantial. This mead is the finest representation of our core commitments to fidelity and quality of ingredients. It pours a deep purple in color, has a dense fruitiness and a mid-palate with considerable tartness and a lingering, balanced finish. Your empty glass will be redolent of the honey component. The Heart of Darkness pairs well with spicy, grilled red meats, high quality dark chocolate, and blue cheeses.

DM falls somewhere between Derivation and Medianoche - an Imperial Stout that we had the pleasure of brewing with our friends at Weldwerks more than 2 years ago. We brewed this Rye Imperial Stout with a higher hopping rate for the rye and hops to play together, to offer a snappy backbone to the aging and decadent adjuncts we had planned on infusing this massive stout with. After aging for 28 months to 24 months in Weller 12yr and Rittenhouse Rye barrels, we blended to taste and infused the beer 4 times with raw and toasted coconut and then finished it with Mexican Vanilla Beans. Two years ago, we set out to recreate Derivation Blend #3, but with twists from what we have learned over the years (we rarely leave any recipe alone and always make tweaks). We threw the Derivation Blend #3 recipe (however without its touch of rye malt this time) and the OWK recipe (no vanilla beans) into Willett Rye and Still630 Rye barrels for 2 years before blending. The result is exactly what we had set out to produce and we are honored it is worthy of the Beer : Barrel : Time name.

We are excited that we could blend up this beer for you - to express our barrel-aging program from a slightly different angle and to offer up BBT more than once this year! BBT Rye will not be a yearly thing, this first batch was technically an experiment, so we do not have enough barrels filled to do this again next year, but we have started filling some extra rye barrels here and there, so hopefully we can see it again in 2022. This stout was first aged 12 months in 11-year-old Elijah Craig barrels from our friends at Heaven Hill distilleries. We then emptied the beer from those barrels and filled fresh 12-year-old Elijah Craig barrels, the same barrels that housed the Whisky Advocate 2017 Whisky Of The Year. We let it age for another year in those barrels and the result is a stout like no other. Incredibly intense, this beer will be a true gem for the faithful fans that seek it out and get to try it. When we first released Kentucky Brunch Brand Stout back in early 2012, we knew we believed in the experience it had to offer, but with only 6 people showing up for the original release, we had no idea how well it would be received over the long term. Fast forward a few years and thousands of visitors from around the globe, we were humbled and excited to do something special for the 10 year anniversary of KBBS. So, back in March of 2020, we brewed up a special batch that would be laid to rest in freshly emptied 19 year Elijah Craig barrels. After about 14 months in those casks, we selected and blended the best of what our barrels had to offer, then introduced this blend to a handful of 21 year Elijah Craig barrels for 14 more months. In the end, only a few select barrels were worthy of becoming KBBS Reserve. Decadently loaded with notes of chocolate brownie batter, waves of maple and espresso, and finishing with beautiful bourbon spice, we find it to be both fitting of what our original KBBS represented, while also exploring the outer limits of what a beer experience can be. This natural millésime beer is a blend of young lambics that have been aged for another 12 months in 40 year old Oloroso and PX sherry casks. Thanks to the long maturation, the geuze-like notes of our authentic 3 Fonteinen lambik are well accentuated by the typical, fine Oloroso and Pedro Ximénez characteristics. By gently decanting the Zenne y Frontera, the aroma of this unique lambik will evolve from vividly tangy to a complex nutty and fully fruity bouquet.

An imperial stout aged in bourbon barrels that is meant to highlight the three things that make up the stout: the beer that was brewed, the barrels that the beer aged in and the time the beer spent aging in those barrels. Brian (formerly of Goose Island), Tommy (formerly of Perennial) and Cory tasted through more than 50 of our bourbon and whiskey barrels in an attempt to craft the blend. We chose a selection of barrels, a majority from Willett and the rest from Heaven Hill that exemplified what we believe to epitomize Bourbon Barrel-Aged Imperial Stout.

These barrels were blended and then further infused with a thoughtful amount of freshly ground cinnamon and Vermont maple syrup at levels that provided a harmonious experience on the palate of cinnamon, maple, barrel roast, vanilla, almond, dark and milk chocolate, coffee, bourbon and caramelized rum.
