For this Pruim, we used Reine Claude d’Oullins plums from Gelrode, Hageland region, Flanders. This aromatic golden-green plum has a juicy flesh and honey-like sweetness. Due to its irregular growth, we picked them in different waves. We macerated these plums for almost six months on a single oak barrel that previously held red Merlot & Malbec wine from the Bordeaux region. The lambikken originate from two barrels and three brews. The final fruit intensity is 500 grams of plums per litre of Pruim.
