Crossed Canoes

Crossed Canoes is the seventh installment in our Barn Quilt series, and is composed of two barrel-aged saisons and our upcoming Four Winters ‘20 blend. The saisons represent 71% of the blend, and were brewed using pilsner, raw wheat, and flaked oats before fermenting for over a year in two Mourvèdre wine barrels, each with a different primary saison yeast strain. The remaining 29% is this year’s Four Winters, which we blended in before packaging the remainder of back in August ‘19. It has all the hallmarks of our favorite mixed fermentation saisons - melon, dried grass, intense minerality, and citrus grove aromas - as well as the supportive flavors of aged hops, musty oak, and stone fruit-forward funk contributed by our spontaneous beer.
