Aimless Time

Our latest mixed culture offering demonstrates the nuanced results that can be achieved from a humble approach.
Aimless Time began with a simple grist of pils, wheat and oats. It was initially fermented in stainless with a mixed culture of saison yeast and bacteria. From there it was transferred into red wine barrels and left to rest for 9 months. It was then bottle conditioned for an additional 6 months.
We taste bright citrus fruit flesh, orange pez, and sweet tart all rounded out by clean lemon-lactic acidity. 5.5% abv on for pours and 750ml bottles to go. Show Less
