Nice to see them here in Ohio. Beautiful pour and thin, but frothy head persists. Nice and moderately roasted with bit of salt as well. would go great with steak, oysters (obviously)or a nice match for a dessert.

Post race beer. Ultra clear pink color and some lemon, citrus rind and mixed berry from the sumac. Lightly tart and great on this warm spring afternoon. Maybe trace hint of Brett starting or I’m overthinking it.

The last one existing from this batch. At nine months, it’s drinking beautifully. Frothy head persists to the very end. just a bit of Belgian yeast esters on a mild-moderate sweet malt and grain background. Medium dry finish.

Pretty light red ultra clear beer. Sumac adds some lemon and earthiness to the wild yeast/bacteria fermentation. Crisp and just slightly tart. Holding up well at 6 months.

Thx Kevin. Bourbon is the dominant flavor but just short of overpowering. Full body with some vanilla, tannins and coconut from the barrel.

Malty and boozy with remarkable amount of potent hop still at 4 years. Caramel, raisin, fig, pine, even bit of maple. More like an American Barleywine than imperial ipa for sure.

Our best sour and testing before next solera brew and pull. Tart but not biting with layers from tons of dregs and three different grists. Brett is restrained similar likely from primary fermentation with mad fermentationists blend.

A nice light effervescent, slightly peppery dry saison. Some Brett showing thru at 2 years. Better with a couple years it seems.
