Barrel Aged Roselle Sour Ale 洛神木桶熟成酸啤酒(2018)

▶The birth of our Barrel-aged Roselle Sour Ale was an unexpected accident that amazed the entire brewing crew. During our yeast-hunting process (yes, we actually hunted our yeast with a petri dish and a flask in hand), we found a unique wild yeast strain in Taipei, that was later named Tien-Long (means “Sky Dragon”). We then brewed a sour ale with Roselle and Tien-Long, and aged it in bourbon and brandy barrels. The wild dragon was successfully tamed during the aging process and happily collaborating with Roselle to create an elegant sour beer full of fruity, butterscotch, and vanilla flavors. This beer showcases the harmony of the Trinity – wort, yeast, and barrels, and also shows you the right way to train the dragon.

▶當讀及波特萊爾的這段詩，我們才深刻的明白，為什麼酒標的設計對我們如此的重要。因為，酒標就是那畫框，唯有靠著畫框而脫離而凸顯，我們的作品方能有著難以描述，迷人的異趣。

▶這次的「洛神 - 桶陳酸啤酒」是啤酒頭木桶熟成之路上的插曲，原本只是加諸實驗項目在木桶上，但半路岔出一個連我們都覺得好喝與驚奇的酒。然後，努力在短時間把美麗的酒標完成。那畫面裡明示暗示的火紅洛神花，伴隨著滿天花瓣灑落，就在那一霎那，聽到的，彷彿就是木桶與洛神花間的私語了。

▶這次的實驗裡，啤酒頭的酵母專家，任性的使用了在大天龍國地區採集的菌種 - 模仿比利時人用天然野生酵母來釀酒 - 我們將它取名「天龍菌」。它與木桶、洛神花的交會，請在令我們驚艷的「洛神」中找尋。

▶初聞是香草奶油木桶香氣，入口是洛神花華美果酸，再以這土地上的原生酵母緊緊相擁。這是我們心目中「洛神」降臨的樣子。 Show Less
