Jubalon (2022)

Plum mead with Jubileum and Avalon plums.

Jubileum and Avalon are two of our favorite purple plums to work with. Both very flavorful and aromatic varieties, but bringing different nuances and added complexity when blended. Avalon brings some extra acidity to the mix - brightening and highlighting the juicy characteristics of Jubileum. The wildflower honey amplifies the flavor of the fruit to another level, while still maintaining a good balance between sweetness and acidity.

Fermented cold and slow to maintain every nuance and natural acidity of the plums.
