Dan Brough: 6% witbier reminds me of their brewpub. Will have a go at their hibiscus wit next.

Hoegarden yeast. Rose water phenolics? and little happening from the yeast. Navel orange, coriander and lemongrass spice backed with Kohatu hops but no where near as good as the old "Belgian Wheat" yeast.

New recipe based on a Dieu du Ceil recipe for cascade blanche. 6% dry and spicy. Taiheke (nz cascade) rather than US cascade.
Dan Brough: Used some old chimay yeast from the fridge. Tastes good but ended up a bit too dry.
Dan Brough: Prefer the wyeast 3942 for wit bier

#10. Grapefruit zest and pacifica hops. Not as good as #1.
Earned the Independence Day (2017) badge!Dan Brough: The wyeast witbier (hoegaarden) yeast delivers and has a nice head and as you can see, quite clear but I think the Belgian wheat is better

Still good but I should stop trying to improve it. This has hoegaarden yeast rather then the Belgian wheat. Also golden naked oats.

Used grapefruit zest only. Didn't work as well. First batch with the hoegaarden yeast. I think I might prefer the Belgian wheat beer yeast.
Dan Brough: Also featuring 10% roasted oats instead of rolled oats.

80% Pilsner and (malted) Wheat, 20% Flaked Oats and Wheat. Riwaka hops, ground coriander seed and grapefruit and meyers lemon zest.
Earned the Wheel of Styles (Level 5) badge!Dan Brough: Grapefruit and lemon zest was from our garden. Very sessionable spring beer.
Dan Brough: Used Wyeast 3942 Belgian Wheat yeast. Nice bubblegum and a bit of acidity.
Chris Young: Is it witty?
Dan Brough: Not as much as you.
Dan Brough: One of the best beers I've made. Will have another go with the yeast I've saved. Next time a hoppy version. Sauvin Motueka perhaps.
Dan Brough: Ferulic acid rest at 45C for 30mins might have helped with its belgishness. Did the first rest in the kettle and then transferred to cooler
Dan Brough: Haven't been able to purchase Wyeast 3942 "Belgian wheat" in over five years. Sad.
