This is a very innovative beer crafted with the latest american hops types. Technically it’s an ALE (High Fermentation). It’s a cloudy (due to the use also of wheat malt) dark orange beer under a long lasting and creamy pale beige foam. This is really fine and persistent due to a soft carbonation. We have choosen a very complex malt recipe to create the right frame for the hopping. This frame enhance the freshness and the aroma of peaches apricots and also rose grapefruits. What will be really amazing and for sure will surprise you is the aroma that you will perceive already from distance: citrus, rose grapefruit, mango, just to mention some sensations. The drink is also dominated by the hopping. Strong bitterness (about 70 IBU) without being aggressive and with notes of bitter orange. Still in the mouth you’ll continue perceiving mango, pink grapefruit and peaches rounding the bitterness.. This new version has the same malt backbone of the previous one but different hops and the introduction of a step of dry hopping. Check Lot Number from 22 included onward. Read Less

Ale Beer style with strong personality, amber with ruby trends characterized by an important hopping but definitely not brash and which emphasizes it, without overwhelm the particularity of special malts used that give hints of coffee, chocolate and licorice. The foam is one of the most important qualities of this beer it is amazing certainly for persistence and fineness of texture. The alcohol title is of 6.7 volumes.
This beer, like any other of our products, it is not filtered neither pasteurized, but follows a patient clarification process at low temperatures which allows the sedimentation and the consequent removal of the biomass produced by the fermentation. Read Less

Built around the malt bill of a typical Weizen, but fermented with American Ale Yeast and dry hopped to be a modern single-hop Citra American Wheat Ale. This is a summer beer by definition. Clear straw colored, clean, with a persistent creamy white foam head thanks to extra of proteins from all the wheat. Aromas of mango, kiwi and spices due to the post-fermentation hopping are followed by mango, passion fruit and wheaty graininess on the palate. This is a beer best followed by another one! Read Less

This Beer is also characterized by a very persistent foam which allows the aromas to develop in complete tranquility to be enjoyed along with the slightly tart freshness as green apples which is the imprint feature. This is our first of a long series of unconventional Beers that Birrificio Sottobisio is going to present time to time featured in a very special black bottle. XPOCHI is an Ale beer in Imperial Stout style with a 8.5% alcohol vol. The color is extreme black (you cannot see through it). The head is a persistent and creamy deep brown. The Aroma is close to the Stout's one but without the smoky note. It's more rounded and it reminds cacao, liquorice and fireplace burned aromatic wood. To the palate you'll get first coffee, tobacco and bitter cacao with very very soft ashy note, then the main hopping comes with its British hops which clean everything but leaving again the palate free to remind coffee and cacao.. This beer will be appreciated during Autumn/Winter time with important meals or for meditation. Recommended a serving temperature of 10-12 degree C and a tulip type glass. Read Less

High fermented smoked Stout. Rifermented in bottle. Color is deep black with a persistent fine texture foam cappuccino coloured. 5.5% alcohol vol.
At the nose is evident the coffee and the smoked obtained with a special malt variety smoked on beach wood.
In the mouth you will appreciate the smoothness and a persistent chocolate and coffee taste typical from the stout style. As for the hops: this beer has been brewed using continental types and this is functional to give the very balanced tone.
Recommended to be drunk at a temperature NOT below 10°C in a tulip glass. An excellent excuse to revive with your best friend the UK atmosphere during the industrial revolution.

This is the extreme personality Beer that we decided to produce to demonstrate the potentiality of our techniques. It is a creation that requires a little of preparation before you approach it. First of all a minimum of history. The Barley Wine is a style that originated in England during the Napoleonic wars because France had placed an embargo on the sale of their wines to the mortal enemy. The English nobility elaborated a workaround in the production of beer with a high alcohol content (just like a typical wine) obtained from the mashing of malt worth to get a high concentration must. Our Barley reaches an alcohol level of 11.8 volumes. It will amaze you for the set of flavors that can develop that make it similar to a Passito or a Port. Extraordinary and extreme original when accompanied by a cheese plate or a creamy dessert. Like some wines Barley also can (must) be aged and in fact we have also already begun the aging process in oak barrels used to age the most one of the most famous wines from Ticino’s friend Enrico Trapletti. This is a very innovative beer crafted with the latest american hops types. Technically it’s an ALE (High Fermentation). It’s a cloudy (due to the use also of wheat malt) dark orange beer under a long lasting and creamy pale beige foam. This is really fine and persistent due to a soft carbonation. We have choosen a very complex malt recipe to create the right frame for the hopping. Our Wild Shot is every year different depending on the barriques we choose. This one has been aged in an oak barrique of Passito di Moscato. The color is deep dark Amber some how taken by the parent, our Barley Wine. Natural carbonation depends on how long your bottle has been aged. Aroma is prune, wood and aromatic white wine. The body is oily and dense. In the mouth it is very perceiveble the Passito di Moscato who lived in that barrique. The beer is lacto-sauer well balanced by tannic and oaky-wooden elements. Read Less

This beer is charactherized by an unconventional use of roasted malts. Color is deep dark brown. Very light head nuts. Aroma is walnut and barrique aromatic wood. At the palate aromatic burned wood in the fireplace, an hint of ash, cocoa beans, licorice, bitter chocolate. A tip of the english hops popup just before the finish based on coffee and cacao. This is an oak barrel aged beer obtained starting from the same most of our Barley and same alcohol content (10% vol). We jealousy keep it in the french wood barrique for 6 months. These barriques are kindly supplied by Enrico Trapletti’s cellars after they have kept twice his top wine brand Culdree ( http://www.ticivino.ch/vini-e-degustazioni/rossi/207-culdree.html ).
The beer looks ruby color, slightly veiled, on purpose totally free of foam (no head). As a matter of fact, the carbonation is in the bottle specifically avoided in order to allow the aromas developing the best: plum, vinous, green apple, black cherries.
On the palate the lightweight and well-balanced sourness, allows us to distinguish the notes of wood, with the tannins present but never dominant, and, again, hints of prunes and cherries. Alcohol is very well hidden. Beer is supposed to be served at 15 °C in a tulip glass, perfect to be sip after dinner in front of a roaring fire. A meditation beer!
