The Cold IPA style is very recent to craft beer and has already seen a number of interpretations. Here at Eventide, a Cold IPA has 3 crucial components. 1) It is fermented with ale yeast at the lowest possible temperature to ensure a healthy fermentation and a super clean finish 2) It is dry hopped during active fermentation which allows the yeast to act upon certain hop compounds and transforms them into nuanced and varied aroma and flavor compounds like rose, kiwi, coconut and strawberries 3) It is brewed with adjunct grain, in this case, corn and rice to give a clean, slightly sweet finish.

The name comes from the test of “Castle Bravo” which was the most powerful thermonuclear device ever detonated by the United States. It was tested at Bikini Atoll in the Marshall Islands in 1954. Its 15 megaton yield was so powerful, it incinerated the coral reef which, when mixed with the radioactive fallout from the blast, fell as a white dust for several hours. The scientists called this fallout Bikini Snow. Read Less

Cosmic Daydream is a Hazy IPA also known as a New England IPA (NEIPA) wherein the style became popular. Since their inception, the “Haze Craze” has swept across the US to the point where there are some breweries who produce nothing but this style. The haze comes from protein aggregates which would typically be removed during the fining process of a non-hazy beer. The addition of cereal grains (wheat, oats) in the mash increases this haze effect. The aroma on this double dry hopped Hazy IPA is intense, which includes notes of tropical citrus, grapefruit, orange juice, lime zest, cannabis, rose, pine resin and a hint of bubblegum. Hops used in the boil were Citra, Mosaic, Galaxy and Sabro hops. The first dry hop includes Citra, Mosaic and Galaxy. The second dry hop consists of Citra, Wai-iti and Galaxy for a massive one-two hop punch. Read Less

The nose explodes with juicy citrus and tropical notes including orange, grapefruit, mango, papaya and stone fruit with hints of ripe berries and an earthy spiciness. SS is very crisp with a clean, cracker-like malt backbone balanced by a moderate hop bitterness. The use of a large amount of both Citra and Mosaic hops as late boil additions contribute citrus and tropical flavors in addition to lychee and gooseberry which is further accentuated by dry hopping with Falconer's Flight 7 C's hops. SS finishes relatively dry with a mild lingering hop bitterness. Overall, SS is a great beer to have while throwing a frisbee in the park or grilling out with friends and family. Read Less

Shadow Work is a strong, rich and very malty German lager with scents of brown sugar, dark fruit and a slight chocolate-like aroma. It is dark brown with brilliant copper-ruby highlights. The flavor is very rich and malty but with a clean lager profile. There are very little esters or phenols and a very slight noblehop character in the form of a gentleherbal woodiness. The mouthfeel is full and decadent without being cloying and finishes clean. There is a slight warming in the chest from the alcohl but it is hardly perceptible in the taste of the beer itself.
