After resting this mole inspired stout in some choice Wild Turkey barrels we moved on to selecting some top notch adjuncts. Conditioning this beer on a blend of roasted guajillo and ancho chiles with a handful of chile de arbol for some extra heat, laying a strong foundation flavor for mole negro. Next we added cracked cinnamon bark, lightly crushed whole allspice, and over fifteen pounds of cocoa nibs; all open roasted in a cast iron wok until the cacao has an 'oily' appearance making the flavors of these ingredients really pop. The final component of this beer's additions is over six pounds of both Madagascar and Mexican vanilla beans. Show Less
