John Trogner and Derek Wolf put their heads together to come up with a unique petite pilsner utilizing cutting edge ingredients. We began the brewing process with German Pilsner and Chit malt, puffed jasmine rice and NYHG cascade in the mash tun to create thiol precursors for the yeast to transform. We then delicately hopped with Czech Saaz in the kettle followed by a hearty dose of Freestyle hops x Phantasm MEGA Moteuka in the whirlpool. Omega Labs Lunar Crush Lager yeast was pitched to unleash the thiol precursors followed by more MEGA Moteuka dry hop along with Riwaka and Nelson Sauvin Hop Kief. We then back sweetened in the bright tank with 176 pounds of ruby red prickly pear. This brew pours a gorgeous bright magenta with a fluffy white head with HUGE aroma and flavor notes of passionfruit, pink guava, Sauvignon Blanc white wine, candied melon, herby citrus with a crisp crackery finish.
