Barrel 379 Cherry Brandy Imp Stout

"Here's an interesting barrel. Back in 2021 we packaged a beer called 'candy is dandy but liquor is quicker'. The cherry brandy barrel was originally purchased by DOT from a cooper in the States. Once we finished with the barrel it was sent to Two Stacks blenders and bonders where they finished a blend whiskey comprising of malt / grain / potstill & peated. The barrel then came full circle back to the barn.

For this stout we went a touch more bitter than usual on the dark malts with the idea being that the dark malts would play more like bitter dark chocolate and elevate the subtle almond cherry remaining in the barrel whilst bolstering the fruit and spice from the Irish whiskey."
