Waffle-Iron Politics

We've used a "gentle" Belgian yeast strain, and cranked the temperature up on a continental pale ale recipe. The result is a balanced spicy beer, with herbal notes of sage and subtle tropical ripe papaya from dry hopping with decidedly un-Belgian Ekuanot hops! At 5.5% it's enough to make you sit up and take notice without taking flight into silly-sauce territory.
