8/31/23 backlog. Very deep in complexity. Red wine wood, tannins, sour cherries, perfectly carbonated. The base beer is still alive. There’s a loads of fruity part from Biere de Garde. How to preserve a style without making the barrel eating it.

Just bought the last brewery bottle. Iron/mineral and deep red wine notes mix with the sweetness of malt aged over four years. Slightest whiff of buttery wine and lite, dry, backend sweet cherry acidity. Damn
