Inspired by nature, we aim to create a unique and harmonious marriage between the world of authentic Belgian lambic from Pajottenland and endemic fruit varieties from Bulgaria, with a specific focus on local grapes. Because of this, we bottle very limited quantities using different methods for co-fermentation, ageing, conditioning and blending in order to create something truly distinctive and impossible to reproduce. You’ll also see us making natural wines and funky ciders! In our search, we source directly from producers and we forage in nature.
