Legendary Yeastman Chris White (Whitelabs) brought proper yeast expertise to the collaboration table for the second rendition of our Modus Operandi/Fixation brew ‘East Coast IPA’. We wanted ‘Yeast Coast’ to be juicier, chewier and hazier than its predecessor and just as (dangerously) sessionable. It was time to blend yeast. Chris recommended a 50/50 blend of Whitelabs WLP005 British Ale yeast for malt body with some residual sweetness and WLP023 Burton Ale for clover honey and pear characters - both of which sent Yeast Coast in the fruity, juicy, chewy direction we were after.

Dry, tart, salty and sour. Nicht-traditionellen.

We’ve taken the traditional German ‘Gose’ - a light, tart, sour Wheat Ale brewed with coriander seeds and salt - and had a spielen.

Rather than relying on Lacto to provide Gose’s characteristically acidic kick, we’ve enlisted ‘Limu Omani’ — Black Limes — to sharpen things up. Used as a seasoning in Middle Eastern dishes, Black Limes are simply fresh limes boiled in salt brine and sundried over several weeks until they feel hollow. Flavour-wise they are complex citrus bombs: sour, tart and tangy on the one hand, musky, pungent and fermented on the other. Bright and earthy at the same time... Perfect for Dry ‘Hopping’; so that’s what we did. Read Less

Big, spicy, tropical and bitter. Broken.

For the last year we’ve been telling you that Corps Promise was ‘the one beer we will never alter. The one recipe we will never tweak.’ We have decided, retrospectively, that our committment to ‘never alter’ Corps Promise was itself a non-core promise and so doesn’t count - especially under extenuating circumstances.
So for the Wheaty Brewing Corps’ first Birthday, and quite possibly every Birthday to follow, we’re going to take Corps Promise and break it; in the best possible way. This year we’ve brewed a supercharged version: bigger, boozier, hoppier and altogether less subtle than the original.

Roasty, oaty, smooth & nourishing. Vim & Vigour.

Our plan with Wheaty-Bix was to brew the Breakfast Stout equivalent of cold drip filtered coffee; clean, lean and delicate on the one hand with a clear intensity of coffee character on the other - focussed and sharp yet full and smooth. To this end we combined a layered Roast Malt bill with Flaked and Malted Oats; a cool, clean ferment with Irish Ale yeast - and cold drip coffee by the (literal) bucket load.
Our friends at Market St sourced just the right bean for our purposes: D’Angelo Ethiopian Single Origin Sidamo. Read Less

Collaboration with Hawkers Beer for GABS 2017 - Big Brown Ale with Honey, Pistachio, Rosewater, Orange Blossom Water and Spices.

Once we started talking with Hawkers Maz about GABS, dessert beers and dodgy alliterations ‘Baklava Brown’ was all but inevitable - having ticked all of those sweet, spicy, nutty little boxes. As with most ‘bright’ ideas, Baklava was easier said than brewed...

We went for a big, rich Brown Ale base; looking for Malt to contribute honey and biscuit characters courtesy of Brown and Melanoidin and deep nuttiness from a fair whack of Golden Naked Oats. A blend of Orange Blossom and Mallee Honey in Whirlpool helped boost the booze while lending some residual Honey flavour. Cold side was where things got tricky...

Nut oils can wreak havoc when it comes to head retention and aging, so we opted for a (all natural) Pistachio extract which we dosed in Fermentor, along with a 50/50 blend of equally intense Orange Blossom and Rose Water. Finished off with a Spice Tea made from Cinnamon, Cardamon and Clove the resulting Brown is unmistakably Baklava. And if it’s as complex to drink as it was to balance then we’ve done eamal jayid! Tangy, tart and revvin'. The need for speed.

As brewers, we like to push the envelope and sometimes our egos write checks our yeast can’t cash. This beer spent a weekend souring in kettle and got treacherously close to the pH danger zone. Fortunately, she hadn’t quite lost that loving feeling and our yeast pushed through...in overdrive.
Add 25 kilos of raspberries from the Adelaide Hills and you get a beautifully tangy, mouth-puckeringly tart, perfectly refreshing summer beer. And at only 3.2% abv, it promises not to leave you inverted. So grab some mates, flyby the Wheaty and head to the beach for a volleyball session in your favourite jean shorts.

In A Nutshell: Sweet coffee, roast, vanilla & milk. Worth crying over.

Our White Stout is all about embracing wilful misrepresentation; “like the opposite of the proverbial ‘Black IPA’, colour is just colour, so when we close our eyes we’re drinking a Stout”. Just as a Black IPA looks Stout but drinks IPA, White Stout looks IPA but drinks Stout; golden, smooth, chewy and roasty - with coffee and chocolate characters that belie its appearance. And therein lies the challenge: getting all that roast flavour and aroma without using dark malts and/or otherwise effecting colour.

IN A NUTSHELL BERRY, VANILLA AND ROAST. WAAAY DECADENT.
Given that the mission for our Good Beer Wheaty collaboration with Gaz (Tiny Rebel) and Darren (Doctor’s Orders) was ‘Dark’ – and that both have a propensity for putting things in beer that don’t belong there, with consistently delicious results – Whey Puft fell into place ‘yn gyflym’.

Essentially Whey Puft is a riff on Tiny Rebel’s classic marshmallow Porter of a similiar name, but with Blackberry, Lactose, Vanilla and more booze. And no marshmallow. Or rather less marshmallow. Doc, hellbent on wreaking candy havoc on our kettle, snuck one White and one Pink marshmallow into the boil before we could reel him in... Read Less

Why Benatar? Not just because there are so many Dog tributes out there that it’s time to put the Cat back into brewing. Or because love is a battlefied. Above all ‘Benatar’ is a good, solid name that lends herself to a long and varied career - including the Handpump version ‘Flat Benatar’ and a barrel aged release ‘Vat Benatar’ to name but two - entirely on her own terms.

Pils: most definitely. Lean, herbal, spicy and dry with that telltale strawlike malt character for which Pils is renowned. A clean and cool fermentation with our favourite lager yeast gives this beer a gentle mineral backbone, while the malt lends a soft, subtle roast character. Spicy hop notes round out the mix making this a straight-up Pils; except it’s black...
Another misnomer - that makes perfect sense. Looks like a Stout, drinks like a Pils.

Pale/IPA divide and was a little less shouty with Hops. Where’s the irony?
Not so much in the dry-hop selection but in the hops themselves: new-wave German aroma hops Hallertau Blanc and Hallertau Huell Melon, which contribute lebhaft mandarin, white wine and melon characters, represent a German take on a New World take on traditional European hops. It was as if us part-time ivory tinklers had been invited to jam with Bach; surreal and utterly implausible - in the best possible way. Weihenstephaner Braumeister Tobias Zollo is not only one of the best technical Brewers on the planet, crucially for us, he’s also a good sport. So with 978 years Brewing experience between us, we set about having ein bisschen bier Spaß...
Natürlich this involved creating a beer with links to our Brewery’s home countries; natürlich this link was in the form of Hops.
