On the palate this beer drinks much like a skin-contact white wine, with deep fruit flavors of dried apricot, baked quince, and candied orange, overlaid with a delicate apple blossom-like floral character. From the Outer Edge of Inner Space is a 6.7% ABV mixed culture saison made with Galaxy hops and wildflower honey. This beer features in your face tropical fruit aromas—dried mango, passionfruit, and lychee are front and center, with a softer bouquet of grapefruit zest and floral rose perfume revealing itself as the beer warms. On the palate the bright fruit continues with flavors of ripe pineapple, catty sauvignon blanc grapes, and Asian pear. Notes of white peppercorn and faint honey linger in the background. An homage to the aggressive west coast IPAs that originally drew me to craft beer, From the Outer Edge of Inner space is assertively bitter and will grip your palate. Though technically bone dry, the complexity in fruit character lends a perceivable sweetness to the beer. Soft acidity, medium-full body, and a creamy honey-meringue head further bring the beer into balance, resulting in an effervescent and highly drinkable beverage. Read Less

Notes of roasted cacao nibs, vanilla, and poblano peppers lead the nose with softer supporting aromas of candied lemon peel, fresh herbs, and delicate white flowers. The peach leaves offer a subtle bitter almond character in both the aroma and flavor, complementing the soft herbal character of the sage, and rounding out the expression of the coffee. On the palate, the smoke is front and center—slightly leathery and dusty, reminiscent of terra cotta earth, roasted agave, and charred red apple skins. On the palate the beer presents like a lemon poppy seed cake—tart citrus with an underlying vanilla-like perceivable sweetness. As the first barrel-aged Keeping Together offering to be released, this beer drinks with a more intense and more angular acidity than the purely stainless steel beers that have come before it, but still provides a balanced drinking experience with a medium body, creamy carbonation, and a silky finish. A depth of toasty spice character—cinnamon, clove, nutmeg—dominates the aroma. Undertones of cocoa powder, vanilla, cherry cola, and soft maple linger in the nose as well. The carrots are present but soft, reminiscent of roasted acorn squash or sweet potato casserole. The flavor offers more spice complexity, but it is well-integrated and isn't biting.
