I’m quite new to the ‘wild beer’ style, and what an introduction! It’s earthy, like reeeally earthy & pungent. Thymus serphillum (thyme) gives it a herbal almost medicinal flavour. Probably the closest thing to what beer was like hundreds of years ago!
