Rhinestone Suits

Rhinestone Suits is a Westcoast IPA of mixed ancestry. Bitterness is more mellow than the palate-shredding IPAs of yore. Still, it balances perfectly with the teensy bit of malt character present from its traditional floor-malted British base malt and its exceedingly dry finish. We loaded the kettle with the classic Westcoast hop Simcoe to provide a flavor profile loaded with notes of lemongrass, grapefruit, and pine needles, as one would expect from a California-born IPA but then changed things up a bit with the dry hop. Breaking free from the flavor profile that fills your glass, we dropped in a massive dry-hopping of Sultana hops and then again with Blanc and Simcoe hops to make an IPA with two different stories. Dry, refreshing, slightly bitter, and loading the palate with classic Westcoast IPA flavors one would hope for; with a huge fruity aroma that takes the nose down a different road with a new-school aroma profile, one would expect in something with a bit more heft and haze.
