After a year, still carbonated to high-hell, but nearly on-point when it comes to flavor (light cider aroma/taste). All-grain re-brew?

We over carbonated this so much it became champagne. Over a year old.

It's better after a "rest"

I ate a lot of tacos tonight.

Mark tells me this is infected. Whatever the case, incredibly bubbly and sharp. Refreshing even if it wasn't the intended finish.

Infected - it's mellowed nicely though. Whatever infected this isn't bad and seems Belgian.

Easiest thing on hand. Still fairly aggressive carbonation, and a slight metallic taste on the edge of mild, crackery-malt flavor.

Carbonation fell off a lot, still there though. Getting better.
