Ho Ho Crumb

Conditioned on Raspberry, Apricot, Almonds, Chocolate, & Madagascar Vanilla

We drew our inspiration for Ho Ho Crumb from the confectionary creations of @ConfectionsofaRockstar in Asbury Park, NJ, where owner and talented baker Kimmee makes an Italian Rainbow Cake that is to die for.

To emulate the uniquely delicious flavor profile of this seasonal treat, we started with a base of massive, full-bodied, imperial stout that provides a decadent foundation of malty aromas and flavors including candied dates, caramelized brown sugar, toasted nuts, and rich, dark chocolate.

We also added some milk sugar in the kettle for mouthfeel and body enhancement and brown sugar for flavor development and a boost in strength.

After a healthy fermentation, this behemoth stout was then conditioned cold on slivered almonds, Ghanaian cacao nibs, raspberry, apricot, and Madagascar vanilla.

We get notes of Italian Rainbow Cake, sweet marzipan, rich dark chocolate, raspberry jam layered chocolate cake, apricot marmalade, and thick and creamy vanilla chocolate swirl milkshake with almond bits. Show Less
