Often, we forget that the process of fermentation is truly a wonder of nature. That it's something to be heralded and marveled at and that it's primary agent, yeast, is a complex confederate. This White IPA is brewed with champagne yeast and the Belgian characteristics are brought about by perpetuating a series of uncommon stressors during fermentation. A slightly hazy golden color and noticeable Belgian phenols are traditional White IPA elements that remain. A soft, citrusy hop profile, bright effervescence, and dry finish are elements that "migrated" in from our unconventional approach. Whether your tastes are "all over the map" or you prefer to call one style home, we hope that Fermentation Migration leads you to an Able Baker brew.
