An intriguing dark ale that moves to its own beat, our minds set about creating a beer that contradicted itself. Rich, dark and flavoursome but at the same time ever refreshing. Malt driven but with the aromatic lift of generous doses of hops.

With the help of traditional open fermentation tanks we let our Dark Ale yeast play... and it likes to play hard. Yeast normally does its thing in closed tanks that tends constrains it work, but with open tanks (that are just like a big soup tin without the lid), the yeast is allowed to run wild.

Raisin like esters bind a balancing act of flavour with a malt bill that rewards the parched palate and delivers a rich, dark colour.

Passed through a hop back laden with whole hop flowers prior to a liberal dry hopping regime during open fermentation, this is a dark ale with a generous amount of reassuring bitterness. Read Less

The white ale story starts in medieval times with brewers' mind stretching flavour experimentation... Belgian monks played with flavour enhancing ingredients and spices such as wheat, coriander, orange peel and other oddball additions and suspended yeast in their ales to create a cloudy white appearance...

With our minds dreaming of beer loving monks from days gone by and our intrigue of specialty Belgian yeast strains we couldn't resist the idea of tackling the creation of a great Australian White Ale.

White Rabbit White Ale celebrates the tradition of brewing with imagination and creativity and delivers refreshing hints of coriander, juniper berry and bitter orange, blended with a hefty dose unmalted wheat. Light citrus aromas round out a classic, cloudy white ale with just a gentle hint of bitterness.

Imagine Belgians snuggling out of the cold in wonderful little ale houses dreaming of places like Australia to drink such a beer. Read Less

Here at White Rabbit we are intrigued by the curious and challenged by the wondrous, interested in creating flavoursome and balanced beers.

We had an idea in mind, created a plan and prepared, but it was the journey along the way that lead us tothis fantastic beer. If you can imagine chucking your favourite record on but accidentally choosing the wrong speed… you know you have all the right ingredients for a fantastic listening experience… but there’s just something not quite right… well that’s what we encountered in the development of this beer. Overcoming breakdowns, ingredients / hop (un)availability, brain fades, brain waves, and through blending, fine tuning, tinkering and working with the ingredients, we made our way to a beer we are very proud of.

We trialled many different ingredients and allowed the beer to tell us what it wanted to be (to the total frustration of our friendly suppliers). In the end we pitted two classic Belgian yeast strains against each other, challenged them with an array of gorgeous hops (some now relegated to the bench) and watched in awe and horror while some of our favourite specialty malts were cast aside in favour of some previously little known but now champion malts of this brew…

What you taste now is a beer with a beautiful balance of delicate fruit esters and subtle spicy notes - neither one dominates the palate - and is supported by a well-integrated malt backbone and everyone’s favourite; truckloads of aromatic hop flowers. Added Read Less

Never content to rest on their laurels, the talented brewers at White Rabbit have been at play once again, utilising intriguing ingredients and unconventional brewing methods to create an ale with unique and complex flavours. Following on from the success of White Rabbit Red and White Rabbit Dark Ale Brewers Cut comes their latest creation, the flavoursome White Rabbit Teddywidder. A Berliner Weisse-style beer, Teddywidder is made from the wort of the white ale, and has a deliciously tart and tangy flavour profile. Its subtle flavours make it perfect to drink by itself, but also exceedingly conducive to flavouring with fruit syrups or purees for complexity, balance and fun.

Originally brewed for the Great Australasian Beer Festival 2013. Teddywidderhas been released again in in 2017 in large bottles as a "Barrel Hall Release". Read Less

The idea for White Rabbit Red Ale came from previously loved wine barrels sourced by head brewer Jeremy Halse and his team. The brewers let nature takes its course with spontaneous wild fermentation in oak over an extended period of time, creating a very special barrel-aged beer.

French oak perfumed with red wine-like complexities, this Flemish red ale is a play on sweet, sour and bitter notes accentuated by a tart cherry tang, creating a depth of flavour that will appeal to beer, wine and cider drinkers. Read Less

To the untrained eye, it's hard to tell where the forest ends and Growling Jack's big frame begins. Trees sprout from his knees and elbows. If you met him, however, you'd find a complicated but very welcoming beast. Much like this Belgian style India Pale Ale he shares a name with. This beer is a fusion of Old and New; hoppy bitterness and pepper, spicy aromatics meld with intense resinous hop notes and clean, simple malt undertones that are deliciously kind to the palate.

Our attempt to conjure the essence of the classic Paloma cocktail in a beer for a refreshing spring or summer afternoon.

A gloriously fluffy base beer with a sweet & sour balance derived from the use of Agave syrup and partial acidification. A slight pink tinge is observed after running the wort through the hop-back filled with Hibiscus flowers. The beer is freshened at the end of ferment with Grapefruit and Lime.
