Red Duck Hop Shark is a full on, super hoppy ale, with moderate hop aromas, and a moderate bitter finish. Its a hoppy beer that is totally sessionable.
We use Centennial & Cascade hops for bittering, starting with fresh wort hopping and progressing to a long, after-boil steep with more Centennial & Cascade, and finish off our Hop Shark with hot wort infusing over whole Galaxy hop cones. All natural hopping means that aromas are not intense, but that the flavours and “hoppiness” are balanced and enjoyable. You might consider this shark to have the bite of a Wobbegong, rather than a Great White, which is basically the whole point! Read Less

This is a brand new hybrid style of beer, that we dont think has been made before. There are two styles of ales that have inspired this beer; Belgian Wit beer and Berliner Weisse.
Berliner Weisse is a very pale wheat beer, which is deliberately soured, either in the mash or fermentation. To drink they are mildly sour, with very light malt and wheat characters, and virtually no hops. A lot of the fermentables come from unmalted wheat, which also gives the beer a cloudy look. They are an acquired taste, and very refreshing for those that have acquired it.
Belgian Wit beers are also made with a proportion of malted and/or unmalted wheat, low hops, and have a moderate spicey character, either from the Belgian yeast strain, or from added spices and other things like dried orange peel.
At Red Duck we wanted to pay homage to Berliner Weisse, but wanted a very light tartiness, no sourness, and we didn't want to achieve this by adding lactobacillicus or lactic acid. So by starting with a Wit/Weisse beer base, using a soft English ale yeast, to avoid spice and extra alcohol formation, and adding a lot of Raspberry & Rhubarb Jam, the resulting beer is quite simply delicious!
When the sugars from the Raspberry & Rhubarb jam are stripped out during fermentation, the true flavours are no longer masked by sweetness. The result is a very lightly coloured, soft pinky white ale, cloudy and very slightly tart. Raspberry & Rhubarb aromas entice, and the beer is refreshing, very refreshing Read Less

Crafted from a very long and intense brewing process, The Ox is one of the finest expressions of hand crafted traditional ales made anywhere in the world. We use two mash tuns, so that The Ox is only made from first run wort.
This translate into a cleaner, purer and more intensely flavoured strong ale. It also means that we have an exceptionally long brew day, so only brew The Ox once a year, and we only get around 400litres per batch.
An amazing experience when the ale is young, but will also cellar for many years, possibly a decade or two.
The Ox is a very strong, intense ale. Dark malts dominate the flavours, with pure roast barley adding bitter chocolate flavours. Some drinkers may find a range of flavours including plum, molasses, blackberry and licorice. But its actually all malt, and one of the purest and most intense expressions of malt driven flavours you will find in ale.
Red Duck’s The Ox is best served from 6?c to 12?C, depending on the individuals preference, and in a large glass. This allows the ale to breath, and as it warms, changing the complex range of flavours. Read Less

Red Duck Black Bengal is a big, dark, extremely hoppy IPA, with a dark malt heart, it has evil intentions and a strong bitter finish that is looking for revenge. A big load of dark malt, and heaps of hops.

We fresh wort hop with Topaz, Centennial & Cascade.

Then we steep for aroma with more Cascade, Centennial, Legacy, Willamette, Simcoe, Galaxy and Citra.

Beer and Scott Wilson-Browne of Red Duck
There is one particular ale, famous around the world,
which is brewed in the Val d’or, in the region of Gaume
in Belgium. It is a small, unusual ale, with pronounced
spiceyness, a little tartness and plenty of funk.
The malt base for this ale is quite simple, and we
fermented first with a simple Belgian yeast strain, then
created a second fermentation by adding some more
sugars and 2 different Wyeast lambic yeasts which
included a wild yeast strain isolated from Belgian lambic
beers, a sherry strain, two Brettanomyces strains, a
Lactobacillus culture, and a Pediococcus culture.
Because of the careful fermentation, where the Lambic
and Roeselare yeast only had very little to work on, our
Gnaume shows very soft Belgian spiceyness and lambic
characters, with a very subdued “Brett” character. A
pellicle has formed in some of the bottles, which is a
harmless white “floaty”. Curiously not all bottles
developed this, and the pellicle doesnt remain solid in
most cases when the beer is poured.
Red Duck Gnaume offers a bit of Belgian spiceyness,
with a pleasing soft, tang, and some interesting flavours
over a broad pallet. Its a really refreshing, Belgian styled
lambic golden ale. Our very first Lambic ale, is a beauty,
somewhere between the magic of a Gnome, and the
magic of that famous ale from Gaume.
We love it so much, that we will brew it again! Read Less
