Abyssal Cosmos is a beer made in collaboration with our friends at Diablo Cenzontle Brewery.

The project started more than one year ago by collecting plants and berries from the street our brewery is on. From there we began a yeast propagation project and eventually created a 100% wild yeast culture with sufficient bacteria to add a pleasant sourness to the beer.
The beer was then made using red prickly pear and Capulin berries (an endemic mexican berry) from local Capulin trees. It has been aged for several months and resulted in a very complex and unique wild profile. Enjoy.
