Wow, banana is going away - to be replaced by a huge tamari umami and dry herbal finish. Time does wonders.

Increasingly happy with it. Still "banana beer" -but developed more character & smoothed out. For 2014 more elderflower, lower ferment temp.

Actually liking this now. Expect banana is there to stay. I'd call it Choc Coated Banana - but that'd be stealing a Bexar beer name.

Another week in the airing cupboard, good carb and the banana seems to have dropped off a little. Great full mouth feel. Flavour odd.

Carb level good after 2 weeks in the airing cupboard. Really dark chocolate coated overripe banana. Too much banana really.

Post bottling dregs. Rather pleased. Big and heavy, very roasty, but I'm finding it very drinkable. Hoping a bit more CO² will lift it.
Yvan: Already planning improvements for 2014's elderflower season :) needs more elderflowers for starters!
Yvan: It's an extract + steeped grain brew. Will pull back on the roasted barley next time, bump up OG, aim for lower temp - is a bit banana-y.
Cory S.: I really like the profile of White Labs 566. Worth trying.
Yvan: Planning on using yeast from the (massive) yeast cake for another odd brew this week... pale this time, & using grapes from out the back!
It'll be time to try re-brewing this soon. But with more elderflower, and all-grain.
