This beer is special to us. It was born with our very first batch of Ichorous Imperial Stout — a style of beer we all love immensely — which was our 8th batch ever and was brewed on October 30th, 2015. At the time we had a hunch it would respond well to barrel-aging and we've been putting it into wine and spirit barrels ever since.
But this one we held on to. It was racked into a well-made French oak barrel that previously held Petit Verdot from Church and Sate — an award-wining Okanagan winery. And we've tucked it away safe and sound in a corner until now.
As a three-year-old barrel-aged imperial stout we're getting notes of molasses, tanned leather, candied sugar, and pipe tobacco. It's presented with a low carbonation (almost still) to allow the flavours to shine without the bite and astringency of carbonation. It's dark and strong and will last indefinitely like the Canadian prairie winter. Read Less
