Back with our buds at Bundobust, we’ve whipped up a brand new sour with the Indian Street Food Legends! The aim as always in our collaborations with Bundobust is to make a beer that is going to compliment the flavours in their expertly cooked dishes whilst also contrasting and taking off the heat a little.

A pale base made with oats and lactose makes a for a soft and smooth base to build from. A touch of souring works with a gentle addition of lactose to create a rounded finish imitating peeled lemon rind. Fresh organic Pineapple Pureé further smooths it all out and sweetens it up with toasted coconut chips making for a creamy and tropical finish. Read Less

With National Curry Week approaching, we’ve teamed up with long-time collaborators and Monk team favourite, Bundobust for our latest Culinary Concept. The key to feasting Gujarati-style is balance - that interplay of hot, cold, sweet, spicy, soft and crunchy all mingling with each other in one meal, sometimes all in one bite.

With so much rich and spicy food at the table, mouthfuls of fruit chaat – fresh fruit dusted with punchy chaat massala – are eaten between scoops of dal and bites of bread and bhaji to provide welcome refreshment and contrast to emphasise the variety of savoury flavours.

We’ve recreated that in beer form, by adding Mango & Pineapple to a silky oat-forward Citra & Amarillo base to create a smooth, fruity IPA, conditioned on kashmiri chilli and salt to mimic the distinctive warming salinity of chaat massala. Read Less

Fresh lime squeezed on ripe mango is one of the world's greatest food pairings. In this latest addition to our series of collaborations with Bundobust, we’ve brought together these most pugnacious flavours into a uber fruity sour harmony.
