This beer is inocculated by wild yeasts (Brettanomyces included) and lactic bacteria. Small, dark and very sweet Damaschine variety plums, also called Ramassin in Piemontese dialect, are added in steeping to restart a new fermentation to characterize the product.

BeerBrugna is matured in oak barrels (3 hl or 5 hl capacity) for twelve months.

Ingredients: barley malt, Barbera wine grapes (freshly pressed destemmes with skins, from a viticulturist near Alba), sugar, hops wild yeast from the skins of the grapes.

Birra dal bellissimo color ebano con schiuma pannosa color cappuccino. Nel naso si presentano per prime le note vinose per poi lasciare dominare sentori di caffè, cacao e una lieve accenno di affumicato. Nel palato è complessa con note di caffè d’orzo, frutta secca, di tostato marcato e di più lieve affumicato che suggeriscono il classico abbinamento con frutti di mare e crostacei mentre la presenza di note salate e lievemente acidule possono contrastare intensi formaggi erborinati.

Processo: Fermentazione ad opera di lieviti di origine britannica, affinamento di 12 mesi in barrique. Rifermentata in bottiglia o fusto. Inspirazione: Totalmente ispirata alle Russian Imperial Stout prodotte dagli inglesi nel XVIII secolo per soddisfare la richiesta da parte della zarina Caterina la Grande. “Ho voluto aggiungere un tocco di originalità impiegando come luppolo l’americanissimo Columbus. Il nome deriva da un personaggio leggendario legato al mondo dei tarocchi. La ricetta della Papessa è un'alchimia che combina diversi elementi raccolti durante una lunga ricerca sulle autentiche Russian Imperial Stout. Ispirata alle tradizionali Scotch Ale, molto corpose e ricche di malto destrine, matura in botti di rovere (ex-cognac e ex-lambic) per 3 mesi e viene poi rifermentata in fusto. E’ una birra estremamente complessa, con note che vanno dal fruttato al tostato, passando per sensazioni cioccolatose e di frutta secca. Al palato, il corpo quasi masticabile viene reso fluido e scorrevole dalla vena leggermente acida che ne caratterizza il finale. Un vero capolavoro di uno dei birrai di culto a livello internazionale!
