A completely fictional style, a Gose is a salty, tart wheat beer that is usually spiced with coriander. We used local Miso Masters white miso to get the salinity and pickled ginger for the spiciness. Super refreshing and perfect for a picnic or after a hike…or just sitting on the porch. (3.7% ABV)

We took our classic saison and soured it then aged it for four months with our house Brett blend. We then put it onto almost 3# per gallon of apricots and let it sit another month before bottling. Super juicy, like biting into a ripe apricot, sour but not enamel stripping sour, low to medium funk.

A smokey, black ale aged with whole coffee beans. Our grain bill starts with over 60% smoked malt, flaked barley for mouthfeel and brown and black malts for a complex roast character. The coffee from Mountain Air Roasters compliments the malt flavor but doesn’t overwhelm the beer.

We dedicated this beer to David Lynch, one of our favorite film directors whose love of coffee and cigarettes is well known. His first film, Eraserhead is our brewer’s favorite movie of all time. Read Less

A dark winter saison (7.4% ABV) brewed with acorn flour in the mash, fermented with Carolina native yeast, Fraser fir branches as a “dry hop” and then aged half in first use white wine barrels and half in stainless with maple wood.

This was an attempt to capture the experience of walking through a forest in the winter and we nailed it. The aroma is earthy and piney with a hint of chocolate, deep mahogany…almost black in color, the flavor is complex with fruity, chocolate notes blend with pine and a perfect dry finish.

Dedicated to La Monte Young, he is one of the original minimalists and avant garde composers. Maybe the most experimental of all the early modern composers with compositions that included feeding a bale of hay to a piano. Our kind of guy…. Read Less

This is a historical recreation of what the original IPA tasted like back when it was actually shipped to India. Massively hopped with traditional East Kent Goldings (140 calculated IBUs) and heavily dry hopped the beer then was aged with Brettanomyces for 4 months and then an additional month in the bottle. Huge funk in the nose blending perfectly with the fruity hops and yeast character. Taste the history!
