It’s built on a lean American 2-Row Malt base that finishes dry to showcase Cascade Cup winning Cascade, along with stunning Chinook hops from @billygoathopfarm in Montrose, CO and Pacific Northwest-grown Mosaic, and Amarillo that burst with an ideal harmony of fresh grapefruit, pine, and subtle raspberry hop flavors with a sturdy, supportive bitterness. It’s a prime pairing with fresh seafood and excellent with smoked, or grilled meat. Heck, we’ve even been known to drink it all on its own. GOOD BOY WALLY returns! The one that started it all. The dog you dream about. Dreams so vivid you talk about the dog in your sleep. The beer always in your head, and the brew always on our mind, this series is always evolving with little process changes to make the best big hazy beer we can. We keep Good Boy Wally as close to its original, but will always vary with our selected hop lots year to year, as well as those process improvements. This batch we're getting unreal peach ring and candied stone fruit aromas. Fresh tangelo citrus, leading to a sweet citrus flavor and a slight spruce earthiness. A smooth vanilla undertone with mild bitterness makes this Wally an extremely enjoyable beer, and as always, one of the best beers to dissect the flavors you get with every sip. Read Less

Sad Boy Wally is our next installment in the Wally triple IPA series. Brewed with American pale malt, malted white wheat, and boiled alongside Arizona wildflower honey. Hopped and dry hopped with the most citrus forward hops we could get our hands on! Featuring Citra, Amarillo, Cascade Lupulin Pellets, and Columbus. We got a little crazy with this one and topped our previous hop usage record with a massive 9lb/bbl hopping rate. In order to highlight these huge citrus flavors we kept the abv in check at 10.5%. We're picking up huge aromas of candied orange/grapefruit, a total citrus bomb!! Mouthfeel is super thick with almost no perceived bitterness. Absolutely our favorite triple IPA to date! Read Less

2022 Great American Beer Festival® Gold Medal Winner : Festbier returns!!! As a reminder, this is not a sweet, malty Märzen (though we love those too and have one coming soon!) this is a session Festbier made for celebrating! We start with a simple yet robust grain bill. Featuring all German heritage floor malted grains, specifically Barke Pilsner, Barke Vienna & Barke Munich malts. Step mashed at various temperatures to achieve our desired mouthfeel and dryness. Naturally acidified in the mash using sour wort. Hopped in the kettle with a moderate bittering addition of Hallertau Mittlefruh, then we give it a touch of Saaz right at the end of the boil. The beer was fermented low and slow with our house German lager yeast for many weeks, naturally carbonated, not fined, but filtered to desired brightness. Read Less

Our House Hazy Pale Ale returns! And with great Pale Ale comes modest changes to this staff favorite! Arizona Star strikes a balance of moderate bitterness and fully pronounced hop flavor in a Hazy Pale Ale sized package. For this updated version, we used a lovely lot of Galaxy in the whirlpool and dry hopped modestly but steadily with Simcoe and Cashmere for a lemony, peachy, piney good time.

A perfect hoppy beer for humid, late summer storm watching, this beloved pale ale feels like a cool drop of rain on the back of the neck. All thanks to Guy Clark, for making us feel cool even when the sun shines all the time. Read Less

Rate Beer Best 2019! A truly warming blend of barrel aged Imperial Porter. Devil’s Claw is the latest mash up of barrel aged beers packaged under the Cactus Catalog series. This time we carefully selected six separate barrels of Who Hit John, all aged nearly a year, and blended into something transcendental. Woodford Reserve Double Oak, Buffalo Trace (this one had over a pound of vanilla beans per BT barrel), and some very eccentric Rum barrels which previously held whiskey were all the vessels in which this blend was respectively aged in. Rich chocolate/toffee hits you up front with thick marshmallow like mouthfeel from the vanilla. Coconut & molasses like qualities chime in around the finish reminding you that there is definitely some rum presence in this bee Read Less

Grain bill is North American 2-row barley, malted oats, and pale wheat malt. We dry hop heavily with Riwaka, Nelson, Kohia Nelson, and Waimea, and we end up with a moderately dry, tropical fruit packed DIPA. Guava, passionfruit, tangerine, mango, citrus. Just when you thought this DIPA went extinct we decided to bring it back! Made to highlight some Freestyle Hop Farms Nelson along with some incredibly fragrant Mosaic and Strata. Something a little smoother, refined in a way to simply showcase the hops and leave a nice light creamy body in the background. Brewed with AZ grown @sinaguamalt barley & @grainrandd raw blue beard durum, as well as some flaked oats. Fermented cool with English yeast. Then double dry hopped with Nelson & a bit of Mosaic. We highly recommend smelling this beer for what might seem longer than normal. Really get your noise in there. Mmm white grape tannins, fresh raspberry, summer vacation in Coronado. Read Less
