Pinot Barrel Four was our second batch. We took the recipe for the Four and sent the beer into some oak barrels graciously donated by La Bete winery of McMinnville, topping them up with a small amount of Oregon cherry puree along with lactobacillus and brettanomyces claussenii to encourage more acidity and aromatic complexity in the finished beer. Half of the batch was blended and kegged and can be found at a few specialty bars while the remaining half is still maturing in the barrels and will likely be bottled at some point towards the end of 2009. Saison du Blodget (prounounced blow-jay) is a blend of two hoppy saisons. Both beers were one-off batches. The first, 2011 Monk and Mingus, was brewed for the Cheers to Belgian Beers festival and used 25 pounds of Tettnanger and Liberty hops. The second, Todo Modo, was a session beer fermented with Saison DuPont yeast and hopped with East Kent Goldings and Santiams. A single cask of each was filled and lightly dosed with brettanomyces claussenii, aged for 10 and 5 months, respectively, then blended... Named for our friend and colleague, Corey Blodgett, who collaborates with us once a year for a new Monk and Mingus brew. Read Less

Oregon Native is a collaboration with Derek Einberger, winemaker at Patton Valley Vineyards. The beer combines their estate pinot noir grapes with our method of cask fermentation on whole fruit, the idea being to highlight the varietal and make a pinot beer, not simply a grape beer. To keep it from becoming too busy on the palate, we avoided the usual mix of yeasts and bacteria employed here for their vineyard culture, yielding a profile without excessive peaks, allowing the nuance of the fruit to show in both aroma and flavor. Aged in casks from both Patton Valley and Fausse Piste, the Oregon Native expresses a truly local character. Read Less

Jeux d'eau follows the Fantasia in our effort to produce soured fruit beers borrowing from traditional Belgian lambics while maintaining a moderate profile that doesn't overstep, allowing the fruit to be showcased. In this case, we're talking about half a ton of muscat grapes sourced from Eola-Amity Hills. These were de-stemmed by hand and packed into several oak barrels, where we then added fresh wort direct from the brewhouse, along with our favorite mix of yeast and bacteria. After a lengthy cask fermentation and maturation, the beer was blended and bottle conditioned for several months to develop. The earthy nose is followed by a spectrum of flavors, most notably the distinct muscat character which seems just as suited to beer as it does wine. Read Less

Spiced biere de garde formulated to pair with Bols Genever, the famous Dutch spirit. Made using many of the same grains- barley, wheat,rye, corn plus a slew of spices: ginger, aniseed, angelica, licorice, juniper and clove. Hugely aromatic and flavorful brew that holds up deliciously against the Genever

Kopstootje is a beer we've done draft only on occasion since 2011, beginning as a collaboration project with Jacob Grier. He approached us with the idea of producing a beer formulated to pair with the Dutch national spirit, genever, and we put together a unique recipe starting with a biere de garde but incorporating many grains and spices commonly found in genever. This release is the first time the beer has been bottled, but it also differs from previous batches in that it's aged entirely in local vermouth barrels, lending a wonderful floral aroma while oak tannin and light fruit notes of rose and strawberry land on the palate. The spices in the beer have softened over the aging process, making for an elegant profile that still shows an edge with pleasant acidity and a very dry finish. Read Less
