Willing to try something magical? We've wanted to experiment with this beer for ages. Back from when the brewers first visited Sherbrooke Liquor in Edmonton, AB in Canada years ago.
After an extremely long day of brewing coffee for this beer, we felt like wizards around a cauldron crafting the perfect concoction. Which can only be described as craft!
The result is a bold, smooth crafted powerful Porter with a discrete vanilla hint alongside massive coffee punch. Those delicious coffee beans are from Holy Bean Coffee Roasters here on Funen.

Hoppy Christmas is bottled and labelled as the most appropriate beer for the season. Say goodbye to those sweet sticky christmas cakes instead, rich and fatty foods prefer hoppy and fresh beers! It's an orangy, lemony fresh IPA. Yeah that's right - we used a load of oranges! 5,9 % alc. gives the beer just the right punch and the malty backbone mingles well with the aromatic and bitter hops. We used Galaxy by the way, dryhopped of course.

Climate change is real! At least we`ve got those long warm summer nights to enjoy ourselves with a nice cold glass of pink bubbles. We used pilsner malt in combination with an enzyme to give this beer a bone-dry finish. We dryhopped it with copious amounts of Barbe Rouge, Citra and Nelson Sauvin hops from three different continents, just for your fruity enjoyment! Finally, this beer is fermented on blueberries to give a pink rose feel and a slight tangy tartness.

This is a Flanders Red inspired beer aged over two years in a 2300 litres oak foudre. It is primary fermented in steel with mixed cultures of Brettanomyces and Lactobacillus and then allowed a long quiet maturation on oak. The secondary fermentation of the microflora combined with the red aromatic malt base result in an extremely complex beer with slight caramel flavours and dried fruit mingling with tart cherries, red grapes and earthy funk. A firm acidity, oak dryness and slight vinegar bite you with a quenching and delicious beverage. Read Less

This beer pours a beautiful crimson red with an inviting pink head. There is a slight acidic sharpness on the nose that quickly gives way to a full on cherry assault, which carries over into the first sip. There are still traces of tannins and funk from the long brettanomyces fermentation and maturation in oak, but it becomes clear that the cherries are the star of this show. We took 500 litres of our oak foudre fermented Flanders red and let it ferment yet again upon 120 kg of sour cherries. After 3 months of wild fermentation and maturation we present this beautiful beer with a delicious tart cherry flavour, a mild acid level and a fairly dry finish. Read Less

This beer has history. Go back 36 months and we are filling used red wine barrels with a golden sour
primary fermented with mixed cultures of Brettanomyces and Lactobacillus. Six months ago we brought 400 litre beer on 100 kg raspberries and left it
for a 2 month secondary wild fermentation and maturation before bottling. The result is a crisp, bright red beer
with huge flavours of raspberries, bracing acidity, light funk and a

Snappy and radiant like the first strike of sunlight. We used fresh ginger root in a refreshing and light wheat beer. We let the beer rest in freshly emptied wine barrels in company with different strains of Brettanomyces and Lactobacillus. After 8 months in barrels and 8 months in bottles this bright barrelaged sour ale is ready with an unmistakable burst and bite of ginger, lemon and slight funk. Read Less

Mea Culpa - Barrelaged Apricot/Peach SourMea Culpa means “through my fault”. You can blame the complex aromas and flavours of this beer on the wild microflora that has been working its magic over time. Although, this golden coloured wild ale has a further dimension brought to it by the addition of fruit. We took a single barrel of a golden sour beer aged for 14 months and let it ferment for a second time upon 60 kg of peaches and 60 kg of apricots. The synergy between fruit, wild microflora and oak components creates a bright, dry and refined beer with a soft acidity and ripe stone fruit flavour. Read Less

This beer started as our annually produced Christmas wheat beer, on its own a great red and malty beer. We inoculated the beer with mixed cultures of Brettanomyces, Lactobacillus and Pediococcus and left it in a freshly emptied red wine oak barrel for a secondary fermentation and maturation. After a long sleep for 30 months the transformation is complete. Enjoy the fruity, spicy and funky aromas followed by flavours of toasted oak, dark fruit and slight vanilla. The finish is dry and tart with balancing tannins. Read Less

The production of sour beer might seem a mysterious process but is in fact science. Nevertheless a process where you try to control as many factors a
possible, but there is always an uncontrollable element. This beer started as our annually produced
Easter wheat beer but was transformed during a secondary frementation and maturation in red wine barrels for almost 4½ years. The golden coloured
sour blond ale has a fruity strawberry-like aroma with a slight balsamic feel giving way to earthy funk, oak tannins and malty biscuit undertones.
The beer finishes with a crips and quenching acidity. Read Less
