Nebula is a showcase of yeast embracing hops. The Vermont Ale Yeast, is responsible for the hazy appearance as it clings to the hop particles left over from extreme dry hopping. The yeast actually contributes a whole host of fruity esters, which can come across as peachy by themselves but in the end they blend seamlessly into the tropical hop profile we have selected.

Our version of the 'West Coast' IPA - the beer that sparked a revolution

When Brett arrived from California he couldn’t believe there weren’t any of his beloved ‘West Coast’ IPAs readily available in the UK. This beer is his version of the style that sparked the craft beer revolution in the US.

Among the orchards and pastures of the green and pleasant Somerset countryside you’ll find our unusual brewery. Our neighbours at Westcombe Dairy make one of the finest Cheddars in the world and Madness balances its intensity and flavours perfectly.

Our Madness IPA uses four classic American hops renowned for their citrus and resinous characteristics. Amarillo, Citra, Centennial and Columbus – used somewhat liberally in late hop and dry hop additions – make this beer what it is. We use a very simple malt bill, and a yeast with a very low flavour impact so that the hops can really shine.

Open the bottle to a tropical punchbowl of aromas, as this beer is all about the hops. There are masses and masses of late hops and dry hops to maximise the beautiful flavours and aromas, so you can experience wave after wave of tropical and citrus fruits. Read Less

Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Gose, is a traditional German-style sour wheat beer, usually brewed with coriander and salt. Once nearly extinct, this very refreshing style is making a comeback and we thought it would provide the perfect backbone to this wonderfully complex summer beer.

Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.


This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer. Read Less

Epic by name, epic by nature, this Farmhouse Ale is a transcontinental fusion of Belgium’s eclectic beer culture and the feisty hops of North America brought to life with the aid of West Country artisanal brewing wizardry and judicious use of the US-grown Sorachi Ace hop. On the nose, the hops deliver a big splash of tropical fruit, followed by ripples of well-seasoned spiciness spreading outwards. Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.

6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!

After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation. Read Less

Sleeping Lemons Export comes in at 6% lending a bigger, maltier body to the beer. The fuller mouthfeel and warming alcohol bring decadent flavours of lemon meringue pie to the character of this beer and the acidity is more rounded and reminiscent of lemon curd.

Summer is here and Sleeping Limes has got you covered! We have traversed the globe to Mexico where we celebrate Brett’s love of South American food and the citrus zing of the mighty lime.

Clean and crisp with refreshing tangy limes and a Moorish briny finish, this is our perfect summer beer. It originally took inspiration from Sleeping Lemons and the beautiful preserved lemons we use, but the idea developed into a cleaner beer, taking the Corona and lime wedge and stepping it up a notch.

Brewing a beer around the taste of lime naturally led us to using this beautiful citrus fruit, utilising both the fresh pulp and the zest. A clean and crisp base was achieved by using a lager yeast with the lime building an addictive tang to the pallet and a gose inspired flurry of salt adding to the finish. What is it? A lager, a gose, a sour... Who cares. Put simply it is one of the finest accompaniments for the British summertime. Read Less

Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.

Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character. Somerset Wild is a beer that shows how much we love working with our environment and the seasons to produce idiosyncratic beers that leave you questioning your perceptions. A beer with the acidity levels of a white wine or farmhouse cider, with a depth, complexity and refreshing drinkability to it that makes it a wonderful beer to pair with food.

Zintuki is Ninkasi’s younger, wilder sister (and goddess of food and dinner.) A perfect name for this blend of Ninkasi (our Celebratory beer made with a small amount of local apple juice) and Somerset Wild (a sour beer fermented using yeast and bacteria from local orchards).

A combination of the complexity and champagne spritziness of Ninkasi with the dry lemon acidic sharpness of Somerset Wild, gives a blend richly aromatic on the nose, refreshing on the tongue and deeply satisfying on the palate. An incredibly unusual beer made in collaboration with three brewers

A collaboration of three brewers, three nationalities and six ideas brought together to learn, experiment and enjoy. Made by Kelly Ryan from Good George Beer in NZ, Brett Ellis (originally from the US) from the Wild Beer Co, and Mark Tranter from Burning Sky Brewery. This beer explores new ideas, techniques, ingredients, combinations and processes.

Using all three brewers combined knowledge and experiences to create an incredibly unusual and complex beer, this utilises every opportunity to take advantage of amazing ingredients and try alternative techniques.
Somerset Sharpham Park Spelt has been used for a full body. Pink peppercorns give a gentle sweet spiciness. Saison and Brettanomyces yeast strains lead to a dry spicy character that will continue to evolve. Wood-ageing in French red wine barrels for 4 months adds depth and oak. Passion-fruit brings a tart tropical fruit character. The 4 month ageing process has been finished off with amazingly tangy Hibiscus flowers. That is one shnoodlepippin beer! Read Less

A blast of fruitiness, this is a foudre-fermented and -aged, pink peppercorn saison topped up with an acid drop of select barrels before being packed to the brim with the ripest Somerset raspberries.

Starting as a pink peppercorn saison, Fruitbooter really comes into it’s own with the artful use of blending. Selecting a special few from our barrel library to enhance the flavour of the saison and boost it’s tartness to new heights. Then come the raspberries, as fresh and ripe as we could get them, straight from Somerset.

The acidic barrel additions and juicy raspberries make for a tart, jammy, mouthwatering beer. Read Less
