This year's Cider/Cider is a "Sauer" version of itself, with an elegant nod to the traditional style of Spanish 'Sidra', with a sour edge of funk that keeps one salivating for more. The cider is a blend of 60% Rhode Island Greening & 40% Northern Spy apples. Fermentation took place in stainless tank before the cider was aged on its lees in stainless for 6 months before bottling, with no fining or filtration. The final cider is refermented in the bottle to produce a lightly sparkling, lightly sour terroir driven cider. Read Less
