30-hour boiled fire cider aged six years in Heaven Hill bourbon barrels
I am pleased to offer you WOODEN HELLFIRE, clocking in at 17.9% ABV. This unique "fire cider" features a process that we at Rev Nat's pioneered back in 2015. It all starts with a partnership with Westward Whiskey. We use their huge boil kettles to heat-concentrate our fresh Newtown Pippin juice for over 30 hours. We then transport this syrupy juice back to the cidery and ferment it with a unique Belgian yeast strain to produce quad-like notes of burnt sugar, stone fruits, molasses, and bitter chocolate cake.
This incredible two-thirds reduced elixir ferments from nearly 30 brix down to 17.9% ABV, possibly the highest on record through traditional, non-iced methods. The cider was then aged over six years in a variety of Old Forester, Heaven Hill, Elijah Craig and Woodford Reserve bourbon barrels. What emerged is an amazingly complex hybrid of traditional dark, bourbon-forward dark beer flavors and the fruit bouquet and port-like nature of dessert wine. Read Less
