Every autumn the forests around our brewery are bursting with small wild blackberries. We spent some days with friends picking them for a beautiful tart red ale committed to red wine barrels back in 2015.
The result is Angela, what we are calling a Stock Ale, a chestnut coloured ale with a cream head. Aromas of prune, vanilla and toffee dominates, followed by the flavour of ripe blackberries, pepper, caramel, red wine and toasty malts. Medium bodied with juicy, tart finish and hints of aged balsamic. Read Less

This cuvée of three beers (a sour brown fermented with wild yeast, a blonde ale fermented with brettanomyces yeast and a clean saison) has been matured in a 2400 liter chianti foudre for 18 months before release. After maturation we only packaged two thirds and left the rest of the beer in the barrel, where it was topped up with fresh beer. A form of simplified solera system, that provides complexity and aged notes to the beer in a year or two.
Nina is an amber beer with white head and a complex aroma of apple, wet forest and a touch of vanilla from the oak. The flavour is light tart, with notes of red berries, plums and fresh dough complemented by toffee from toasted malt. Finish is dry with light caramel notes. Read Less

Triple dry hopped golden sour ale aged in

Deep golden and slightly hazy with a lasting off white pillowy head. Aroma is mainly mandarin and grapefruit with notes of apricot peel, sunburned grass and a spicy quality reminiscent of dank pot. The body is light with some slickness and bright effervescence from the bottle conditioning. The flavour is grapefruit layered with fresh bread dough, bergamot and sour candy. The aftertaste is tart, finishing with a lasting drying bitterness.

Golden ale brewed with local wheat and aged in a used red wine foudre for 18 months with our house culture blended with a 2015 curve.
Bright straw colour with stark white billowy head. Aroma is doughy bread, wet iron, unripe lemon and candy-like bergamot notes. On the palate up front acidity leads to orange blossom honey, apricots and a hint of toffee. Light bodied, crisp and lively with transient pithy bitterness.

The nose is PX sherry, blackberry preserve with hints of leather and vanilla. Flavour starts out sour-sweet with cocoa powder, prunes, coconut, toasted rye bread and a hint of balsamic. Roxy is based on our old ale, Natalie, that was kept an extra year on its cognac and bordeaux barrels. Before packaging we blended in some soured barleywine for extra complexity and a touch of balancing acidity.
Dark tan head on an ebony body with chestnut highlights. Hits the nose with an immediate punch of sunbaked leather and toasted wood, followed by bourbon and macerated raisins. Flavor is at first drying but with the warming alcohol and complex flavors of cocoa, caramelized figs, overripe blackberry and walnut skin leads to a light tart finish dominated by oak and yeast derived flavors. Blend of a dark trappist ale and a traditional milk stout that spent two years on a cognac barrel. Some of the sugar from the milk stout is unfermentable leaving some body to this otherwise dry and crisp beer. A beer that is surprisingly refreshing for its color and alcohol level.
Almost black with chestnut highlights and tan head. Initial aroma is dark chocolate with hints of coffee but as it warms up vanilla overtakes. Flavor follows with the dark chocolate, tobacco and coffee, topped up with prunes, burned sugar and sour cherries. Finishes with bright acidity, balsamic sweetness and a lingering roasted note. Finish is warming alcohol, lingering acidity and bitter almond.

The Mistress is inspired by the strong and dark baltic porters that, for centuries, has been brewed and consumed by people around the Baltic Sea. Among them the inhabitants of the island where our brewery is. Brewed traditionally with a mix of domesticated and wild yeast and then put to rest in freshly emptied bourbon barrels for a full four years.
Black and viscous with a small tan head. Aroma is dominated by tobacco, leather, dried fruit, smoke, and warm asphalt. Mellow carbonation and slick mouthfeel with complex flavors of dark chocolate, coffee, burned sugar and black cherries. The bourbon character is well integrated and manifests as vanilla, wood and a hint of warming alcohol. Long mouth coating aftertaste with sticky caramel sweetness and lingering roasted bitterness. Copper colored beer with cider vinegar, toffee, red berries and hints of
vanilla. Creamy mouthfeel with lively effervescence leading to upfront tartness
with flavors of dried apricot, bruised apples and cinnamon, followed by a candy- like sweetness. Salt spray in the aftertaste with malty sweetness balancing the acidity.
The beer is made together with Nord snaps, using the residual fruit from their production, in an attempt to minimize food waste on our island. Read Less

The Mistress is inspired by the strong and dark baltic porters that, for centuries, has been brewed and consumed by people around the Baltic Sea. Among them the inhabitants of the island where our brewery is.

Black with small tan head. Strong aroma of molasses, PX sherry, sweet tobacco, scorched raisins with light smoke. Viscous mouthfeel and low carbonation with flavors dominated by raisin, prune, dark chocolate, hints of vanilla, red wine, and umami. Old ale initially fermented with Belgian trappist yeast in and matured in bourbon and cognac barrels with Garden Party. The secondary fermentation with wild yeast transforms the yeast flavours into complexity without much acidity. Fat, intense aroma of dried fruits, coconut, vanilla and coffee. The sweetness is complemented by raisin, dark rye bread and chocolate and balanced by warming alcohol. Extended maturation on lees provides almost meaty flavours not unlike bacon. Read Less
