We brew what we love to drink and we've been in love with Smoothie Sours for a long time now! This is our first iteration of the style and because we are business incompetent, we decided to put it in our Core Range so you can drink it in the beach or in the Christmas Eve! In simple terms, this Smoothie Sour starts as a 10% ABV kettle sour Berliner Weisse and after maturation we add to it 50% of strawberry. We don’t let the strawberry ferment so the aromatics stay true to those of the original fruit and as a result of the fruit dilution the final ABV is 5%! No lactose, no marshmallow, no vanilla, no nothing! Just lactic acid versus fructose! That’s the simple balance we like! We just hope you love it the way we do! Read Less

Momotarō is a popular Japanese folklore hero. He was born from a giant peach which was found floating down a river by an old childless woman who was washing clothes there. How does this story relates with this beer you may ask. Just like Momotarō, a few tons of peach were found floating down the river, just next to our brewery by a fruitless brewer. This time we collaborated with a brewery that we truly love, our friends from B*BOP Fermentory, and together we decided to brew a Smoothie Sour inspired by Egyptian lust and guided by Khonsu the Moon God of ancient Egypt! We've used decadent amounts of peach, pineapple, Cubeb pepper and a pinch of salt for some extra love. We've been dreaming for some time now about introducing a range of beers into our portfolio with our two favorite ingredients... hops and fruit. This is the realization of our dreams: Heavily Fruited Sour Ipas! We start by brewing a New England Dipa without any addition of hops in the hot phase and therefore practically without bitterness. We acidify the wort with our lactobacillus culture and ferment it with our New England Ipas yeast. During and after fermentation we Double Dry-Hop it with Mosaic and Motueka and after a period of maturation we introduce 20% fruit (Peach, Guava & Passion Fruit) which we do not let ferment in order to ensure that the aromatics of the fruit remain true to reality. Reverence, the gesture of showing deep respect for something or someone, is precisely what we try to do in every beer we make. This is the last of three releases from our barrel-aged program. Reverence is our base Imperial Stout aged for 10 months in Casa Del Sol mezcal barrels and blended with some fresh beer to achieve a balanced and smooth profile. To give you some extra love, after the blend was done, we decided to drop in a huge amount of Ají Panca chilli from Peru, cacao nibs from Ghana and vanilla beans from Madagascar. Anathema is our second iteration of the Heavily Fruited Sour Ipas style and with it we tried to create an even more harmonious environment between hops and fruit. We increased the amount of Double Dry-Hop to 20 g/L as well as the percentage of hops undergoing biotransformation. We selected Citra and Loral to achieve a citrus and floral profile that we believe fits perfectly with the strawberry and blueberry. To close the aromatic bouquet we decided to add vanilla from Madagascar which gives that warm hug to close 2023 with a bang! Merry Christmas and a Happy New Year! Read Less

After 12 months of deep rest in the barrels it was conditioned in copious amounts of cocoa nibs from Ghana, raw coconut from Sri Lanka and vanilla beans from Madagascar.
