Then, after fermentation, we freeze no more than 2% of the water content out of the beer. This concentrates the alcohol and smooths out the flavor for a true winter seasonal. Like the bliss of a “one swing stick” into ice, this beer will distill your attention down to the single focus of the bend of your elbow. Fire & Eisbock will age well, but do drink one now to compare with our barrel-aged eisbock.

As the barrel aging was coming to an end, loyal staff and family braved the wilds of the Eastern Sierra to pick Elderberries from Lundy and Scheelite Canyons. Soured in our Kettle with fast-souring Lactobacillus to achieve the desired level of tartness, the wort is then boiled and hops are added to give a little balance of flavor. After finishing fermentation with our house yeast, this brew was blended with Tart-Cherry puree for a refreshing lemonade-like tartness with a pleasant effervescence to make this brew a perfect libation to cap off a day of recreation during the heat of the summer. 2012 Seasonal Release. Approximately 100,000 years ago, a basaltic lava flow filled the middle fork of the San Joaquin River, just west of present-day Mammoth Mountain. The lava cooled slowly and evenly, producing 3- to 7-sided columns. Then, during the last ice age, glaciers scoured the columns into the formations we see today.
Originally brewed for the centennial celebration of Devils Postpile, we superheat volcanic rock to start the boiling process. The result is earthy, caramelized wort, giving this ale its unique flavor. We then generously hop with Centennial hops (of course!) to create this double pale ale. Read Less
