Hafer Pale Ale is our "House" Pale Ale, a beer we have been Brewing and changing since our days brewing beer on a kitchen stove. Hafer is designed to highlight the flavor characteristics of Simcoe and Citra hops while also providing for a faint bitterness to carry out the slight sweetness provided for by the 2-row and flaked oats used. In December of 2020 we brewed the first iteration of Crunchy Leaf Leaving - Pale Ale, wanting to make a new Pale Ale based on our learnings throughout 2020 and use ingredient combinations which we had not yet tried. We wanted to create a medium bodied yet creamy body and mouth-feel, with a solid but not overpowering hop presence throughout the tasting experience. We are excited to share this next batch of Crunchy Leaf Leaving which we adjusted based on our experiences with the first batch from December 2020. We find that a nose of ripe stone fruits and malt greets you after pouring this into the glass, and a hop presence focusing on stone fruit/citrus accompanies you without becoming overly bitter at any point. The water profile used for this beer brings out the perceived maltiness - that combined with our mash and hopping process also provides for a dry finish, leaving you with a lingering hop flavor.

Once a year we open our favourite book and we get inspired to brew a beer that would fit at first breakfast, second breakfast, and all the other meals of the day one may need before going on an adventure. This year we decided to increase the base malt to provide a more full body - yet also maintain a level of residual sugar and slight bitterness to provide a sweet, roasted, slightly smoked experience. This is Moon letters 2022. Cheers that we may all be a little more like those fantastic beings that find so much joy in the small but important things in life, food, celebrations, family trees, and for some - world shaping adventures. We followed the recipe for this beer almost exactly as written by Weathered Souls Brewing, but we followed our water treatment process as well as added some of our favourite malt to the Grain-Bill, Smoked Beechwood malt from Bamburg, Germany. We decided to keep the alcohol content at 7% for this beer, and find the beer to have a deep and complex dark chocolate flavour, with a pronounced bitterness from the roasted chocolate malt and the single hop usage of Cascade hops - with subdued c02 the creaminess of the beer is more pronounced. The slight residual sweetness of the beer helps balance the bitterness and provides for an interesting taste journey as the beer is allowed to come to room temperature. This is a sipper :) Read Less

An English Ale / American pale hybrid of sorts, and in the end what we hope you feel is an "easy drinker" - Good Vibes Save Lives is a Golden ale with a grain-bill consisting primarily of Pilsner malt, and a hop schedule containing a variety of Nobel, American, and New Zealand hops used at various points of the brewing and fermentation process.

We wanted to try and create a beer which provides a subtle bitterness, a slight fruit aroma on the nose and a light body and mouthfeel - to in the end create a beer that one can enjoy sipping while doing video chats with friends and loved ones - focusing on what is important, while allowing the beer to play an accompanying role to what we hope are great moments in these difficult times. We harvested hallertauer mittelfrüh from the Jaensch family garden and decided to use some of the hops in this pale ale - a dry and fruit forward pale ale, with a malt bill really heavily focused on Pilsner malt, allowing for the dry finish, and for the spice and fruits of the hops to come through. The second iteration of our first Helles "Memory Flow" - each beer in the Memory Flow Helles series is our interpretation of this wonderful style of beer. This beer is inspired by the crisp bitterness of Northern German Lager style beers, while taking memory notes from the many great beers we were lucky enough to sample during our hiking trip in 2020 in the Upper Franconia region. We ourselves like to let this beer warm up a bit and really open up to release the hop and grain characteristics. This version received a different whirlpool hopping approach than the first - and we adjusted some mineral levels in the water based on things we wanted to adapt after the first version. Prost! Alle Brauereien erhielten ein Grundrezept zum Nachbrauen mit der Bitte, dass die Erlöse aus dem Bierverkauf an die lokale Gastronomie- und Lebensmittelindustrie gehen, um diese Betriebe in dieser schwierigen Zeit zu unterstützen.

Once a year we open our favourite book and we get inspired to brew a beer that would fit at first breakfast, second breakfast, and all the other meals of the day one may need before going on an adventure. This year we decided to increase the base malt to provide a more full body - yet also maintain a level of residual sugar and slight bitterness to provide a sweet, roasted, slightly smoked experience. For this small batch we added some Single Origin Mexico Arabica from Amsel Kaffee.
