Saison brewed with Spruce Tips and Honey

Tree Tipper is the result of carefully considered combinations. Spruce tips with honey. Ingredient with process. We steeped spruce tips in locally sourced honey from The Hive Supply prior to adding both ingredients to the fermenting beer. This process allowed enzymes in the honey to transform some of the more aggressive, resinous compounds in the spruce tips into flavors and aromas that are more floral and fruity. Notes of green mango, toasted white bread, pineapple, cotton candy, maple sap and unripe strawberries lead to a delicate finish of spruce and tangerine zest.

Levain is a long time coming. The culmination of our thoughts, feelings, and beliefs about the microorganisms that allow us to make beer. Mashed with raw spelt from Janie’s Mill, hopped with aged whole cone hops then fermented and ripened in used oak wine barrels with a blend of our house saison yeast, our favorite strains of brettanomyces, dregs from bottles that inspire us, and microorganisms sourced from my 6 year old sourdough starter.

Levain is deeply complex yet spryly drinkable with a delightful acidity. You’ll find notes of limeade, lemon zest, lychee, mango, musky leather, earthy blue cheese, wet hay, pink starburst, papaya, black cherry, and a touch of oaky vanillin and spice. Read Less

Perceived Distance is a collaboration with friends from about as far away as they can live and hops from about as close as they can be grown.⁣

We teamed up with Carl from Great Leap Brewing in Beijing and Nunzino from Hop Head Farms in Michigan to brew this saison with hops that were harvested less than 48 hours before we used them. We used a purposefully restrained hand and the gentlest extraction method we know in an effort to capture the unique character of freshly picked hops and delicately fold that character in the esters from our house yeast. The result is a striking integration of crushed cardamom, nutmeg, coriander, and pink peppercorn with fresh orange and grapefruit zest and a wisp of cedar.⁣ Read Less

Hoppy Saison Brewed with Cascade, and Willamette

Wherein Time and Space is about extrapolating depth from coy simplicity. Brewed in collaboration with our friend Rob from Supermoon Beer Co. in Milwaukee, it features some old school hops (Cascade and Willamette) and some hops that are actually old (aged Celeia and Willamette). The beer is taut and nimble with notes of grapefruit peel, white flowers, Juicyfruit gum, black pepper, coriander, and a touch of aged hop funk.

Welcome to Gardesville is a question we asked with our Friends at Hop Butcher For the World. What if we brew a traditional Oktoberfest wort, with munich and vienna malts from Sugar Creek and German Spalter Select hops but then ferment it hot with our house saison yeast and cold condition it like a lager? A Wallonian Oktoberfest. The result has aromas of freshly baked bread, toffee and a decidedly continental hop character. It is full on the palette with flavors of caramel, biscuity malt, raspberry, pear, slightly herbaceous hops and a clean, dry, succinct finish. Read Less

Taxonomy Anomaly is a hoppy saison that fuses new-world-hype-hop flavors with traditional belgian techniques and fermentation flavors. It’s brewed with raw spelt and Riwaka hops from New Zealand which yield aromas of overripe peaches, Alphonso mango, blanched almonds, dehydrated grapefruit, lemon thyme, and just a slight suggestion of hoppy dankness. The finish is very dry with a firm, quenching bitterness and hints of blue raspberry cotton candy. Read Less

Spelt Grisette conditioned on Spanish Cedar.

Bend Toward Daylight is mashed with Wind Malt and malted spelt from Sugar Creek Malt, as well as unmalted spelt from Janies Mill. Wind Malt is made by ‘kilning’ the germinated barley in the sun and warmth of summer wind rather than more intense, modern heating sources. It is how the malt used in original lambic, witbier or berliner weisse would have been made. We then co-ferment it with our house saison yeast and lactobacillus before conditioning it on Spanish Cedar. Read Less

We are grateful to get to work with the Beer on the Wall crew to make our take on a traditional Belgian holiday beer. Our version starts with a rye saison (shocking, we know) base that we then condition on some traditional holiday spices: clove, allspice, crystalized ginger, mace, cardamom, and cinnamon. The resulting beer is a beautifully complex beer with notes of giner snaps, mulled cider, tanned leather, oranges adorned with cloves, and a dry but lingering finish. This beer is naturally carbonated in this bottle so some sediment on the bottom is normal. Read Less

We built a mash of pilsner malt from Sugar Creek and Wapsie Valley Corn, an heirloom corn native to Iowa that dates back to the 1850’s. We hopped it very lightly and fermented it hot with our house yeast. Saison Frileux is a Dark Saison inspired by the English dark beer cannon, particularly the dark mild, porter and Russian Imperial Stout traditions. It is brewed with golden naked oats, flaked barley, crystal malt, debittered roasted barley and dark invert sugar. After it was fermented to complete dryness with our house saison yeast we conditioned on some very special coffee from our friends at Dark Matter.
