Full Toss Brewing

Been a long time! Surprisingly settled bottle, and surprisingly lovely Brett character. Getting tutti frutti and a bit of medicine/farmyard funk. It's a beautiful addition to homebrew because it is so good at clearing out little flaws over time.

Earned the You Don't Know Brett! (Level 13) badge!

This has held up well - hops have faded, but there's nice toffee malt and dark fruits from the oak/wine/malt combo. Would love to do a rebrew.

Little to no mango left but it's nicely tart/salty with some intriguing funk that has developed.

This is strikingly similar to Orval - the Brett character is almost identical! I wonder if that’s where the infection came from...

Little tannic on the back end, but otherwise really well integrated

So much dried apricot flavour, wish we’d chucked some Brett in this! It’s really clean

Clearing the sinuses - these are holding up really well. Not as aggressively tart as I expected, balanced salinity.

These are coming along nicely - lovely dried apricot flavour. Bit of wheat, moderate bitterness. Wish we'd added some souring bacteria as acidity would complement this nicely.

Apricot has faded a little - more of a general stonefruit flavour now. Some bitterness, touch of funk. Finishes very easy.

Did the old mystery bottle Gus N. - surprisingly getting some light hop and funk that wasn't there before. Developing nicely.

Perfect in the muggy heat. Really happy with these.
