This Gose with a twist was brewed with Pilsen Malt, Oak Smoked Wheat Malt and Flaked Rye. The salt was also smoked and as a finishing touch we added a handful of Oyster Mushrooms to the last minutes of the boil. Hops are Magnum and Saaz.
It was fermented with the Theriez House strain and Lactobacillus Brevis. We also believe that there is also some Brettanomyces in the mix.

The result is a funky, earty and refeshing Gose. Read Less

A wild ale with roasted sweet chestnuts and third use medlars. The chestnuts were roasted in the oven until golden brown. These were added to the mash along with the grains. After nine months the beer was aged on third use medlars for another three months.

Aged Noble Hops, East Kent Goldings

Medlar, Sweet Chestnut.
