Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing. Read Less

One Key is a new brand family that we're debuting! The Saison version is first up! These are double fruited blends that will always include apricots. Apricots and peaches or nectarines go together so well, but they're rarely available at the same time during harvest. If a brewer, like us, wants to use them together and not use puree or extracts, we must first ferment the beer on apricots and then on another stone fruit like peaches or nectarines. So that's what we did. We took choice barrels of Saison and fermented them on organic apricots at a rate of over 3 pounds per gallon. After a month, we transferred this onto organic peaches at a rate of over 3 pounds per gallon as well. The result is a sour juice bomb unlike anything we've ever released. Read Less
