Åbricot is the word used to designate apricots in Wallonian dialect. It’s a blend of saison (spring barley, Wallonian Winter barley, spelt), 1 year old lambic and apricots. The fruits come from beautiful Les Mées in Southern France, a location renowned for its terroir. This beautoiful piece of land gave birth to some of the juiciest and most flavorful apricots we have had a chance to try.
This beer showcase notes of apricot skin, apricot pith, nectarine, yellow fruits, mellow grain, minerality, lemony, tart, slight woodiness, white flowers, balanced bitterness, slight yeasty funkiest & barnyard notes. An authentic farmhouse beer, Brewed in our 800 years old farm. Read Less

NOT cherry bomb.
Ceréjhe is the word used to designate cherries in Wallonian dialect. A delicate blend of saison (spring barley, Wallonian Winter barley, spelt & wheat) fermented with our own strain, 1 year old lambic and cherries. The cherries come from the lovely lands of our friends Sandra and Stephane next to the beautiful Mont Ventoux. The cherries underwent a 7 months long fermentation at cold temperature and were left intact (no pressing) during the entire process to allow the aromas to slowly diffuse into the beer.
The maceration was then back blended with the base saison to reach a balance between the saison, the lambic and the cherries. Not meant to be a cherry bomb, we hope that you'll enjoy the delicate notes of these beautiful fruits, coming from an outstanding terroir.

Poere Di Cwin is the word used to designate quince in Wallonian dialect. A blend of saison (spring barley, Wallonian Winter barley, spelt), 1 year old lambic and Wallonian quince, fermented for 1 year in ex-Meursault barrel.
Aside from the rustic notes from the saison yeast and the lambic microflora, the nose is comforting with warm notes of wood, vanilla, cloves as well as a fresh component reminiscent of tea, jasmine, apple, quince and a mineral touch. Taste reflects the nose together with notes of lemon, tangerine curds, pillowy grain backbone and a mellow body.
This beer is the culmination of our efforts to bring an elegant beverage from ingredients (quince, winter barley, wild yeast & bacteria) that once were considered too rustic by the public.

A very special variation of our Soyouz base beer, cold-infused with some fresh Equator cacao roasted Frederick Blondeel and Equator whole coffee beans from Café Delahaut. Of note, we collected the cacao and coffee beans directly from their production site and infused them within 24h after the roasting process, in order to perfectly preserve their delicate aroma.
The blend creates a beautiful bouquet of chocolate, coffee, nuts, praliné and red fruits. As always, the Soyouz base beer has a marked bitterness that creates some balance and reminds the bitterness of coffee and cocoa.
Open between 10-12°C and allow to open and warm up throughout the tasting. Read Less

Our take on the Mexican Stout style. We designed it to be balanced than most version. We used ancho chillies known to being fruity chocolate notes. Together with stronger type of chilies they bring some heat but we kept the dose low enough to avoid a spicy kick that would dominate the beer. Mexican cocoa nibs and coffee bring a slight tartness and deep chocolate/coffee notes. We used cinnamon and vanilla from Madagascar amount to mellow out the entire profile. 3 years ago, a record crowdfunding allowed us to start producing much more seriously and to work in much better conditions. Malt Attacks was one of the major contributors to this project by buying a full brew. They had to be patient but the result is finally ready and will be released this Saturday.
Without them, we wouldn't be here today and we wanted to return the favor by providing an uncompromising, powerful and fully matured beer after more than a year of aging.
A beer without compromise and brewed only with the 4 basic ingredients of beer (malt, water, yeast and hops) that reaches no less than 14.1% of alcohol.

Important tasting note : this beer is very stable and can be poured at room temperature without experiencing gushing. However, we shot for high level of carbonation as we believe it's the most adequate level for saison. We took 2 specific measure during the brewing and fermentation to guarantee that the bubbles are small, close to champagne size. However, this can only be achieved at our target serving temperature, 4°C. While this might seems low, saison are designed to be refreshing and thirst-quenching. The beer will anyway warm up and develop within a few minutes and you'll be able to enjoy the full aromatic pallet this beer has to offer.


Commercial description : Socoron (or Socouran) is the name used to designate 6 row winter barley in Wallonian dialect and translates as "Escourgeon" in French. It is one of our traditional saison. It’s brewed with malted and raw local 6 row winter barley. This grain is more challenging to work with and has a much lower yield which explains its rarity in modern beer. However, the challenges it creates are worth facing to get its deep rustic profile with earthy and bready notes.
A traditional farmhouse yeast strain combining high attenuation and a complex fermentation profile that displays white spices, lemon, grappes and grassy herbal notes.

We brewed a chocolate-forward Russian imperial stout and our amazing friends from La Source Beer Co. created a RIS intensely infused with cherries. When blended together they form a beverage that leaves no doubt, they were meant to end up together. The name comes from the etymology of "Symbol" which in ancient Greece was used to establish contracts : a pottery was broken into two piece and both piece could be assembled together to show their common origin and end up the contract. See this beer as one half of a beer and bring in another half of La Source version to get the all picture.

We wanted to balance the tobacco which can be overwhelming and dosed the cigars on the low side so you might need to warm the glass up a bit and look for the aroma. Our take on the heaviest of all Belgian classic, the quadrupel. We have used different layers of caramel malts and high quality Belgian candi syrup to create a complex bouquet of dried fruits including plums, dates, dried raisins as well as notes of fresh dark cherries. To impart a deeper complexity we used rye malt which results in an oily texture and some spicy notes. We have used a classic abbey yeast strain to create a balanced fermentation profile rotating around orchard fruits and white spices. For the young beer, also called “bière de coupage”, we used our four grains saison to provide a rustic basis with a delicate texture. The old beer is one and three years old lambic that we selected from our favorite producer. The beer is naturally carbonated from the blend, no sugar added.
