We took our house sour ale and threw about a pound and a half of peaches into it. Then - our angry little team members (the Lactobacillus Crew) - went to town on all that sugar. That made it more sour, but didn’t leave a lot of peach, so we added even more peaches! Once we got close to where we wanted to be, we threw in organic bourbon vanilla beans from Sri Lanka.

What’s left is a crazy tasty treat that’s less of Peaches N Crème experience and more of a fancy-pants aggressively tart desert! Read Less

Two batches of our house sour ales were generously fruited with heaps of prickly pears.

There is no debate among us, this is hands down our favorite from our series of 'I See Days of Sours' releases each year.

A literal painstaking process, we carefully (and unsuccessfully) attempt to prepare the fruit without getting pricked by micro-spines.

Truly a blend of class and trash, we hope you enjoy this boozy sour with candy-like flavors reminiscent of something that rhymes with "Fatermelon Gollyranchers".

Our sour ales rely heavily on the luck 'o the yeast gods.

Often times, those gods are angry... and they HUNGER.

We can throw a ton of fruit in, but the billions of living creatures in our sours just go to town on the fruit we give them, leaving behind more essence than flavor.

NOT THIS TIME 2020!

We haven't had a batch this flavorful in over 2 years, but we're definitely not complaining.

This entry in our library of house sours definitely falls under the 'Bourgeois' side of things. Oxidized flavors have their place in the hoighty-toighty wine world with ports and sherries more than the beer world, but the do show up.

This bottle would make a wonderful gift for your host at any Yacht Party, starting with port-like flavors that quickly melt, opening up to the cardamom seeds, Bourbon Vanilla beans, and oak seasoning notes that finish off this fancy-shmancy ration of the finer things in life.

back in the before times of January 2020 and right before the world changed, our Brewer attended a wedding in michigan. While there he stopped at a little 'brewstillery', chatted up their Brewer, and learned about the magic of Saskatoons.
Saskatoon's - or June berries - look like blueberries but they have a richer and nuttier character... when you eat them (think roasted blueberries with cashews and brown sugar).

unfortunately when you throw them into a sour beer for 8 months, they get a bit medicinal. Fear not though they may have an herbal taste but we took that as a challenge not a loss! We rescued the batch by adding and vanilla infused maple syrup and organic vanilla and beans what you hold in your hands is weirdly superwonderful! Read Less

Imperial Barrel Fermented Blonde Ale.

Ten years ago we had a dream - we wanted to make a blonde with some 'oomph'. By fermenting on oak chips to replicate some of the malolactic fermentation notes of superb Paso Robles & Napa Valley Barrel Fermented Chardonnays...we got close. Ten years later? We nailed it...but....

We'd be doing it for ten years with half measures. We'd never COMMITTED. It was always fermenting on oak chips. The dream? The dream was to barrel ferment.

Well, we finally did it. AND IT IS PERFECT.

Once upon a time, we ran into some trouble while brewing and made 3 gallons more than we planned for. After scrambling around, we found 3 glass jugs - a perfect fit! We filled them, added our magic microbes... and forgot about the project!

Rediscovering them a year later, we realized each jug tasted a bit great... and a bit ugly! Throwing caution to the wind (and having a vessel available) we blended them together and decided 'What could be better for three 'ugly sisters' than "Ugly fruit" - the venerated Cherimoya. What came out was gorgeous and reminded us of the film 'Triplets of Belleville'.

With that, we had a name for this magical elixir.

Now, whenever we have a sour blend that just isn't working 100% (and when the season allows) we throw in cherimoya & a dash of vanilla...and poof! They always rescue the batch and you get Belleville in your hands! Read Less
