This has been an incredibly exciting pilsner for us as we brewed it at the tail-end of January and cold conditioned it for a very very very long time knowing that we would release it for our 2nd Anniversary. North German-style Pilsners are known to have more bitterness than their Bavarian brethren...and we're ok with it! We laid out an expressive blend of Hallertau hop bouquets for this beer. It is delicate, floral, soft, crispy, and just everything that we want in a Pilsner. You can pick it apart or you can sit back and enjoy the effortlessness...it's whatever you want it to be. This is the best lot of Mosaic that we have used to date, and this beer jumps out with big dark fruit and mixed berry aromas/flavors along with a creamy citrus finish. We're so happy with how the Mosaic shines in this beer and looking forward to spreading the love. Tasting notes: blueberry, pomegranate, tangerine
We're in love with how this beer tastes super fresh and excited for how it is going to evolve over the next couple of weeks. We always work on dialing in texture and mouthfeel to round out each beer. Our beers purposefully finish a bit drier in order to maintain the drinkability aspect that can make a beer so memorable.

This is an exciting take on a style that you know we love to make, with hops sourced from the Alsatian region of France. We attribute the unique floral and fruit-forward characteristics in this beer to their Alsatian terroir. The malt character provides a honey-like foundation, and while we went with a more modest hopping regime, the aroma packs transatlantic notes of dried lilac and apricot skin. Many New Zealand hops have parental lineage to German noble varieties, and we think they all work together beautifully. The hop blend brings together a cacophony of bright wine-like expressions ranging from pomace to watermelon rind, and a dried jasmine bouquet that sets the firm foundation for this pilsner. We are always looking to learn and refine techniques for our pilsners. Given that, we decided to trial something fun with our beloved Premiant for a special, one-off, batch in which we sourced whole-leaf Czech Saaz. We tweaked the recipe to amp up the expressive Saaz character, which really highlights the whole-leaf characteristics. The biggest difference we get in this batch is a sweet lemon hop character that shines. It’s still the same bright and drinkable Premiant. Very familiar, but with a fun little twist. Read Less
