To buy a caf\u00e9 as a woman in Norway in the 1920s was a bold and unusual move, but that was exactly what she did. Caf\u00e9 Alliance quickly became the posh place to be seen in Harstad in North-western Norway. Desiring to take her already thriving business to the next level, Hulda got in touch with a Danish pastry chef to buy a cake recipe that would add extra fame and fortune to her caf\u00e9. The Danish chef came up with something he called \u2018The King\u2019s Cake\u2019 \u2013 a sponge cake baked with meringue and almonds and filled with custard and whipped cream. In Hulda\u2019s version it became \u2018Kv\u00e6fjord Cake\u2019, named after her birth place. Soon its popularity went from a regional delicacy to a nationwide favorite, mostly made for celebrations deserving a little extra. A Norwegian musician even wrote a \u2018Hymn to the Kv\u00e6fjord Cake\u2019. \r\nIn 2002 a Norwegian radio program made a nationwide poll to find their listeners' favorite cake, and with no less than 69% of the votes \u2018Kv\u00e6fjord Cake\u2019 came in on top. With typical Norwegian modesty the cake with the now long forgotten Danish roots was simply announced to be \u2018The World\u2019s Best cake\u2019. \r\nSo when we here at Amager Bryghus were contacted by the B\u00e5din brewery from Bod\u00f8 in North-western Norway \u2013 only a solid stone\u2019s throw from Harstad and Kv\u00e6fjorden - to do a collaboration beer, it only felt natural to revive this cake in a beer. But that is exactly what Agostino Arioli has done. Agostino is the mastermind behind one of Italy\u2019s oldest and most well renowned breweries, Birrificio Italiano, founded in Lombardy in 1996. And as with most of the greatest beers of this world, simplicity is the key. Take a German style Pilsner as your base beer and then dryhop the hell out of it \u2013 not with potent, beefed up modern aroma hops - but with subtle German noble hops. Et voil\u00e0, you suddenly have a crisp European Pilsner made even more enticing with those floral notes found in that kind of hops. That\u2019s how Tipo Pils was created, and how Italian Style Pilsners were born. A beer tasting beer made for drinking. That\u2019s it. When we realized that Agostino was coming to Copenhagen, we reached out to him and asked if he would like to come play with us at Amager. And much to our pleasure, he said yes. TipoRye is the result of that play date. A Tipo Pils as the base but given a Nordic touch with the addition of 25% rye malt for a little more spice and a slightly fuller body.
